Recipe Name: Grilled Chicken with Lemon Dressing &Green Vegetable Salad

Total preparation and cooking time 30 min


Ingredient List
2 pieces of chicken breast
1 bunch of snow peas
1 bunch of green beans
1 bunch of asparagus
cup of baby spinach
cup lemon juice
Zest of half a lemon
30 grams butter
cup chicken stock
Sprig of mint
1 table spoon of olive oil
Salt
Pepper

Instruction
Cut peas, asparagus and beans on an angle.
Blanch Vegetables for 5 minutes, immediately drain then chill the vegetables in cold
water.
Season chicken breast with salt and pepper to taste.

Place oil in the frying pan then cook the chicken for 2 minutes each side.
Remove chicken and rest covered.

In the same pan add chicken stock and reduce until cup is left then take off the
heat.
Add butter and stir.

Add oil, lemon juice, lemon zest, salt and stir.


Add mint.

For my first experiment I made Grilled Chicken with Lemon Dressing &Green Vegetable Salad, overall I believe it could
have been executed better but was an average first attempt. I was disorganised with the planning of my dish and
preparation of the utensils, Overall I will need to choose a dish with less components and manage my time as well as
organisation by practising cooking my dish before the lesson.
The presentation was not to a great standard and could be improved by more colours and a more structured plate; the
dish was well cooked, the chicken had good colour and the vegetable salad still had a vibrant green colour.
