    Equipment Proposal

    Equipment: Poly Cutting Board Top for stainless steel work table in central kitchen
    Measurements: 120 x 48 inches, 1-in thickness
    Justification: Plastic cutting surfaces have many advantages over wood surfaces. Plastic cutting boards are less
    porous than wood, making it less likely to harbor bacteria. Plastics are also easier to clean, and are available in multiple
    colors. The current cutting board top is textured on both sides but has already been flipped once. Therefore a
    replacement will need to be purchased.

    Considerations: Some companies sell poly table tops that are textured on both sides for maximum use. The current
    top is 1-inch thick, but a slightly thinner top may be more affordable.

    RECOMMENDATION

    Bargreen Ellingson would be the best choice, for economic and environmental reasons. It is a local, family-owned
    business that has grown to be one of the largest multi-service restaurant supply, design and fabrication companies in
    the country. Eric was very helpful through the process and quick to answer my questions. He priced out two poly cutting
    board table tops, both much less expensive than the competitors quote. Additionally, the products are sourced from a
    local plastic company, requiring much less travel/fuel for delivery.
