Appetizer - Shrimp Cocktail
Pour one cup of cocktail sauce into bowl, dessert dish or martini glass. Place shrimp
around the edge of the bowl so they curl around edge and hang. Place two slices of lemon
on the edge of the bowl. Serve chilled.
Main Course - Tilapia with tomato risotto
Boil rice until soft; use roughly two cups of water for one cup of rice. Cover water and
let cook on low eat for around 30 minutes while you prepare vegetables. Once rice is
cooked, strain the remaining water and add diced onion and three tablespoons of butter,
stir on low heat. Add tomato juice and let simmer for five minutes on low heat then increase heat to medium for five minutes and stir occasionally. If not proper texture (thick,
with all grains connected by sauce), add heated vegetarian stock SLOWLY while stirring.
Take off heat when proper texture.
Chop both squash, bell pepper and remainder of onion. Place in a frying pan with 1/2
cup of vegetarian stock on medium heat, cover. Stir occasionally, take off heat once all
vegetables are soft and at desired texture.
In a mixing bowl combine mayonnaise, sour cream, lemon juice, parsley, dill and black
pepper. Stir and place in fridge for the end.
Place a flat top frying pan on low heat and add two tablespoons butter and lemon juice.
Once butter is fully melted, raise to medium heat and place tilapia filets in pan. Add
more lemon juice and dill. Cook for eight minutes; flip half way.
Place risotto in the center of a shallow bowl, place fish atop risotto and vegetables
around the edge. Garnish with parsley and a lemon slice.
Dessert - Chocolate Mousse
Combine chocolate mousse mixture with milk in a mixing bowl. Using electric beater beat
until thick. Place in freezer for remainder of time cooking.
