Focaccia
The name focaccia derives from panis focacius, which is Latin for bread of the
hearth a flat bread baked on a hearth, or sometimes under the ashes of a fire. It has variations
in Turkey, Greece, Italy, France and Spain, and originated either in North Central Italy with the
Etruscans, or in Ancient Greece. Either way, the bread itself predates the Latin-derived name by
which we call it.
Focaccia has its origins as an unleavened bread. In certain atmospheric conditions, it will
still rise a bit even without yeast. This implies that focaccia was first developed in an inland,
mountainous region, where the air is thinner, as opposed to a coastal area, where yeast is needed
to make focaccia rise.
While focaccia still exists, and is quite popular, in its original form, it is also an ancestor of
pizza. Focaccia itself is often topped with many of the same ingredients as pizza, although the
toppings vary widely from country to country and region to region.
FocacciaplayedanimportantroleintheRomanfestivalofSaturnalia,andasSaturnalias
traditionswereappropriatedintoChristmascelebrations,sowasFocaccia.Infact,duringthe
middleages,unleavenedfocacciawasoftenusedbytheChurchinthecelebrationofthe
Eucharist.
Whilenolongerconsideredholy,focacciaremainsaspopularasitwasthousandsof
yearsago.Itisbelovedwithallitsmanytoppingsandinallitsmanyforms.
