Mushroom and Herb Chevre Filling/ Cheese Ball

Button mushroom, sliced


Shallot, minced
Onion, minced
Leek, minced
Chevre (goats cheese)
Salt? Omit, think this was for chicken
Pepper
Butter
Fresh thyme
Fresh basil, chopped

1. Combine shallot, onion and leek in frypan with butter and sweat until clear.
2. Add mushrooms and herbs and saut until soft and water has released from mushrooms.
3. Remove from heat and let cool.
4. Combine with goats cheese.
Optional: Form into a ball and roll in finely chopped walnuts. Serve with crackers. Or stuff a
chicken breast with it.
