Aloo Tikki Chaat

Great Street food in India


A potpourri of the hot and cold; the sweet and sour; the piquant and … just delicious!
INGREDIENTS METHOD
500 g potatoes,
25 g cornflour 1. Boil, peel and mash the potatoes.
3 slices of bread 2. Boil green peas and drain.
1/2 cup green peas-optional 3. Chop green chilis.
2 green chilies, 4. Remove the edges of bread slices. Dip the slices in water and
juice of 1/2 a lemon squeeze them between your palms to remove the water.
1 tsp cumin powder Crumble them with hands and add to the mashed potatoes.
1 tsp red chili powder Also, bread crumbs can be directly added to mashed potatoes.
salt to taste 5. Mix all the ingredients well, except the oil. Divide into 12
oil for frying equal portions and make balls. Flatten each between the palms
into discs.
6. Heat oil in a fry pan and shallow fry over medium heat until
golden brown and crisp on both sides.
7. Drain and pat dry on absorbent paper.
8. Serve hot with green chutney and/or Sonth.

For the Aloo Tikki Chaat you will need to have

1. Chole- Boiled chick peas - canned is fine!


2. Green chutney - Corainder or mint
3. Sweet Chutney-Tamarind or Sonth
4. Yogurt, beaten till smooth. Add salt+ roasted cumin Powder + 1tsp sugar
5. Chaat Masala- pre packaged
6. Finely chopped Onions
7. Fine sev to garnish
8. Red chilli powder
9. Chooped green chilis
10. Finely sliced ginger
11. Chopped coriander leaves.
 

How  to  serve  (  Tailor  make  to  suit  your  taste!)  

1. Place  2-­‐3  hot  Aloo  Tikkis  on  serving  plate.  


2. Pour  about  2  ladles  full  of  chick  peas.    
3. Then  add  about  2  tablespoons  of  spiced  yogurt.    
4. Then  drizzle  about  a  spoon  each  of  Sweet  Chutney  and  Green  Chutney.  
5. Finally  garnish  with  chopped  onion,  chopped  chilis,  sev  and  chopped  coriander  leaves.  
6. Sprinkle  a  bit  of  red  chilli  powder,  chaat  masala  and  cumin  power  on  top  of  it  and  serve  immediately.
