Baked potato with coleslaw, parsley butter and

sour cream
INGREDIENTS:
1 medium potato
c grated cheese
1 T butter
1t chopped washed parsley
2 T sour cream
carrot grated
c shredded cabbage

METHOD:
Turn on grill to 200 degrees C
Wash potato and pierce the skin in several places with a fork.
Cook potato in the microwave for 5-6 minutes.
Chop parsley, wash in a tea towel until clear.
Reserve a sprinkle for the top garnish and mix remaining into
butter and set aside.
Shred cabbage. Grate carrot and mix together. Set aside.
TO SERVE:
When the potato is cooked, remove from oven and slice a t
shape in the top.
Using a tea towel push the sides of the potato until centre is
raised.
Spoon in butter, followed by cheese, coleslaw and top with sour
cream.

Sprinkle on paprika and parsley to serve.
