Twiggs Christmas Cake

Ingredients

Box (250g) red cherries


Box (250g) green cherries
pkts (250g) yellow sultanas
pkt (250g) currants
pkt (500g) seedless raisins
box peel
pkt (500g) castor sugar
pkt (500g) selfraising flour
(500)g butter (NOT Margarine)
Large eggs
glasses (500ml) brandy
250 X 250 mm baking tin

Method

Mix all fruit together and pour brandy over to soak. Leave at least overnight or longer
(2-4 weeks recommended in large 2 gal zip lock).
Mix the fruit with the flour until all fruit in well covered. (This is the secret!)
Mix butter & eggs & castor sugar in another bowl.
Then mix all together.
Line the baking tin with tinfoil and then with layers of cardboard (5mm), and then at
least 2 layers of wax-less (Parchment) paper.
Bake at 140 deg celsius (285F) for about 4 hours. Watch carefully.
