HORS DOEUVRES

1.) Calamari --4dzn = 48

Cut up lemon wedges


Cut up parsley -garnish

2.) Swedish Meatballs 3dzn = 36

Bake Meatballs (thaw first?)


Sauce
-Place butter into pan
-Slowly whisk in flour
-Stir until smooth. Allow flour mixture to cook
-Roux should be color of coffee with cream
-Slowly add in stock while stirring (stock may sputter and roux may seize,
but keep adding stock slowly and keep stirring). Eventually sauce will loosen and
become silky
-Return meatballs to sauce and mix together.
-Place in can
Chop parsley for garnish
3.) Bacon & Scallops 3dzn = 36

Bake in oven (see package for oven temp and time)

4.) Bruschetta 3 dzn = 36

Cut bread. Brush with olive oil garlic mixture. Bake (time and temp?)
Dice tomatoes. Mix with Olive oil, (minced) garlic, balsamic vinegar, salt,
black pepper
Chiffonade basil (mix in with mixture when building)
Build
5.) Eggplant Canaps2dzn = 24

Cut eggplant into rounds


Brush with olive oil, season with salt and pepper, grill each side (3-4 min)
Cut tomatoes into rounds
Ricotta mixture: ricotta cheese, salt, pepper
Cut scallions (small/thin)
Build- eggplant, ricotta, tomato, ricotta, scallion garnish with scallions on top
6.) Smoked Salmon Canaps3dzn = 36

Cut cumber into slices


Cheese mixture: _____
Cut salmon into 36 pieces,
Wash and pluck dill
Build: cucumber slice, cheese mixture, salmon, dill

7.) Raspberry Brie Filo Cups3 dzn = 36

Pastry cups (thaw?)


Cut up brie into small cubes
Build: Brie block, raspberry jam. Bake in oven for 5-6 minutes at 375F.

DRINKS

1.) Watermelon Mint Mojito

Cut up watermelon. Blend with sugar. Set aside


Wash and pick mint leaves
Cut up limes into (small) wedges.

GARNISH)
Service: In glass, place 2 lime wedges, mint leaves...crush together. Add
ice. Fill glass watermelon slush. gingerale. Mix together (spoon) Garnish
with lime wedge and mint leaf.
2.) Sparkling Sangria

Slice apples (THIN)


Slice oranges (THIN)
Slice strawberries (THIN)
Mix grape juice with cut fruit (set aside overnight)
Before service (mix grape juice mixture with ginger ale). Serve in large punch
bowl with ladle

3.) Pina Colada

Cut up pineapples into wedges for garnish-leave skin


Blend together: coconut milk, ice, crushed pineapple, Pineapple juice
Pour/hold into pitcher.
Service: Pour into glasses per request, Top glass rim with pineapple slice
4.) Strawberry Daiquiri

Blend: Frzn strawberries, sugar, lime juice, sprite, ice


Pour/hold in pitcher
Serve: Pour in glass. Garnish with lime circle (FROM MIHITO GARNISH)
5.) Champagne

Wash, then freeze Raspberries


Mix together: Gingerale, pineapple juice, white grape juice (CHILL)
Pre pour into champagne glasses. Add 2 fzn raspberry per glass
Set up into tiers?
