Beignets

(pronounced bey-YAY)

Ingredients:
cup water
cup butter
teaspoon sugar
1/8 teaspoon salt
cup all-purpose flour
2 large eggs
teaspoon vanilla extract
Vegetable oil for deep frying
Powdered sugar for dusting

1. In a 2-quart saucepan over medium heat, heat


water, butter, sugar and salt until butter melts and
mixture boils.
2. Remove pan from heat and add flour all at once.
With wooden spoon, vigorously stir until the
ingredients are thoroughly combined and mixture
leaves side of pan and forms a ball.

3. Add eggs, one at a time, beating thoroughly after


each addition until the mixture is smooth and glossy.
Add vanilla.
4. Meanwhile, in wok over medium heat, heat about 1
inches oil to 375 on deep-fat thermometer. Drop
heaping teaspoonfuls of dough into hot oil and fry
beignets, a few at a time, until golden. Drain on
paper towels; keep warm.
5. To serve: Sprinkle warm beignets lightly with some
confectioners sugar.
