Molecules, Moles, Flavor, and pH


One of the main goals of this class is to try to understand the science that underlies food
and cooking. To do this we will ask lots of questions. This turns out to be a terrific way to
learn about food more generally, as well as the science that underlies various cooking
processes.
As we go through the course we hope that you will also start asking lots of questions
about the food and cooking you encounter in your life. In fact, the last component of the
course involves you asking and investigating one of your questions in more detail by
conducting experiments in your kitchen. We will discuss this more later, for now the
question is: If we wanted to understand the science of food and cooking, what might be
the very first question to ask?
One reasonable question would certainly be:
What is food made of?
We will start answering this question in the video below. The answer will turn out to be
significant not only as an introduction to this course, but also for many of the questions
and answers we will encounter in future weeks of the course.
