Does it have to be dried fruits? I guess I don't understand
the process but there's tons of fresh produce here as well
as raisins. Does it have to be a glass jar? I have a plastic
peanut butter one.

Extremely interesting and well done!
I have a question: does this "yeast" contain only baker's
yeast (saccaromisiae cerevisiae) or some other kind of
creatures such as lactobacilli?

I'd love to hear back for more details or tips on how to get
a good strong yeast from dierent parts of fruits which
are not dried.
I think I am going to try starting with organic banana
peel tonight with a bit of propolis honey. I think I'm also
going to try some from kiwi-skins from today. Do you
think either of those could work?
Thanks Wao.

Hi.
I have not made a page to show you how to make yeast
water from fresh fruits but you can see some instruction
here
http://originalyeast.blogspot.com/2009/03/new-appleyeast-water.html
Basic method is same as using dried fruits.
You need clea jar, water and fruits(and sugar). Mix water
and fruits together in a jar.
**You are now making kiwi yeast watar? Kiwi has
'actinidin' that breaks protein so it is not good to make
bread because our contains lots of protein.
But don't get disappointed!
Once you get the yeast water, you can use it for cooking.
Since the yeast water breaks protein, it can make meat
tender. (like pineapple in hamburger ^_^!)
So soak the meat in the yeast water for 1 hour and grill it.
you can get tender meat!
Or, if it is sweet, you can just drin k it for your health.
Banana yeast gives you good bread.
good luck

My son is only 7 years old and in his short life he has gone
from almost being placed on a feeding tube b/c of his food
sensitivities to an average kid and I cannot go back to the
hell he experienced three years ago. Thanks to this
rotation diet he and myself and my husband have been
given a second chance at life. Willing to pay you or anyone
who can make any of the above bread well.

Hi Wao,
Your breads are beautiful! I tried 5 dierent jars and 4 of
them are beginning to bubble. How bubbly should they be
before i use them? I saw your tomato posting (wow!) and
mine just have a little bubbles on the surface (the orange
has the most) I bake GF so i need a strong rise. Thanks!

Glad to hear that you and your daughter are getting nice
result^^
If you prefer to keep the fruits in the jar, you could do so.
Hope that you would be able to bake good bread.
It's cold in japan...

Hi Wao,
We were able to bake simple rolls with the yeast water I
made!
First the dough was very soft and it was dicult to
handle, but it turned out ok. I guess it is usual when
using yeast water straight from the jar..?
Also, I will leave the fruits inside the jar next time. ^^
Thank you for your advise!

Hi, friends.
I got a question from my friend about how it looks like when the
yeast water is ready for bread baking.
It looks like soda pop and has many tiny bubbles.(If yours look
refrigerator.)

If you start making your yeast water more than 5 days ago and
yours does not look like this( or anything close to this), add
some sugar and shake your jar and wait for another day.
If you are using sulfured dried fruits, you might not get any
good result...
