Objective
My goal is to obtain an internship that will coordinate with my New England Culinary Institute guidelines for 700 hours within
the time period of April 1st- September 30th. I am seeking a restaurant where I can further deepen my knowledge and passion for
cooking in your restaurant, amidst gaining knowledge of proper kitchen management.

Bar Harbor Beer Works

Menu and recipe development. Hiring, scheduling, managing, and training staff. Ordering product from within and outside the
operation, and creating daily special to sell particular food items.

Working the fry-o-lators, griddle, range, expo, and production. Cooking seafood and shellfish, fish mongering, expediting plates for
service, and anything else needed at fast paced restaurants fulfilling a constantly rotating job description to keep production
consistent with proprietor minded consideration.

Taking care receiving of orders including one under a shellfish distributors license , invoicing, and ensuring proper rotation of
orders as well as some experience with ordering from both big and small food vendors

Experienced in large scale barbeque production (pulled pork, chicken, ribs, custom barbeque rubs and sauces( i.e: Kansas City,
Memphis, and Carolina styles); upscale French and local New England style seafood production as well.

Knowing and ability to execute any cooking position in all three restaurants, and enforcing corporate policy to maintain proper
working conditions
