Ingredients:
1butternutsquash
1tbsp.vegetableoil
koshersalt
3lb.Yukongoldpotatoes
4clovegarlic
1cuphalfandhalf
1stickunsaltedbutter
Directions:
1. Preheattheovento400degreesF.Inalargebowl,tossthesquashwith
theoilandseasonwithsalt.Spreadthesquashonanonstickbaking
sheetandroast,turningonce,forabout25minutes,untiltenderand
lightlybrownedinspots.Transferthesquashtoafoodprocessorand
pureeuntilsmooth.
2. Meanwhile,inalargepot,coverthepotatoesandgarlicwithcoldwater
andbringtoaboil.Simmerovermoderateheatuntiltender,about20
minutes.
3. Drainthepotatoesandgarlicinacolander,shakingouttheexcess
water.Addthehalfandhalfandbuttertothepotandheatuntilmelted.
Removefromtheheat.Pressthepotatoesandgarlicthrougharicerinto
thepotandseasonwithsalt.Stirinthebutternutsquashpureeandcook
overmoderateheatuntilveryhot.Transferthemashedpotatoestoa
bowlandserverightaway.
