MUTTON CURRY KERALA STYLE

Mutton - 1 kg
Onion (big) - 3 nos
Tomato - 2 nos
Ginger - 1" piece
Garlic cloves(small) - 10 nos
Greenchillies - 4 nos
Chillypowder - 1 1/2 tsp
Corianderpowder - 3 tsp
Turmericpowder - 1/2 tsp
Garammasala - 1/2 tsp
Bay leaves(Vazhana/Karuga ela) - 3 nos
Fennel(Perinjeerakam) - 1 tsp
Cloves (Grambu) - 4 nos
Cinnamon(Karugapatta) - 2 sticks
Curryleaves - A few
Salt - As reqd
Oil - As reqd
DIRECTIONS

Step 1. Wash mutton well and cut it into small pieces.


Step 2. Heat oil in a pan.
Step 3. Add fennel, cloves, bay leaves & cinnamon and stir well.
Step 4. When fennel becomes slight brown in color, add sliced onions, green
chillies and curry leaves.
Step 5. :- If u have time, u can use small onions(kunjulli) in place of big ones
for better taste.

Step 6. When onions turn golden brown, add ginger-garlic paste.


Step 7. Reduce the flame and saute it.
Step 8. Add chilly powder, coriander powder and turmeric powder and stir for
5 mins on medium flame.
Step 9. :- If u want the mutton curry to be less spicy, reduce chilly powder to
1 tsp and green chillies to 2 nos.
Step 10. Add tomatoes and salt and mix well for 5 mins.
Step 11. Add the garam masala powder.
Step 12. After 3 mins, add the mutton pieces and stir well.
Step 13. Keep it on medium flame for 10 mins.
Step 14. :- Do not add water at this stage.
Step 15. Stir occasionally to avoid sticking to the bottom of the pan.
Step 16. Transfer the contents into a pressure cooker.
Step 17. Add 3 cups (teacups) of water and cook on medium flame for 20 - 25
mins.
Step 18. :- Mutton curry is ready.
