TEAM B: JOUGS OF JOY

POTATO SALAD
Yield: 1 hour and 15 minutes or 1 hour and 30 minutes
Prep Time: 30 minutes
Cook Time: 35-45 minutes
Inactive Prep Time:

Ingredients:
6 eggs
3 lbs medium red potatoes, rinsed
4 oz liquid crab boil flavoring
1 cup mayo
2 tablespoons sweet pickle relish
salt and pepper to taste
1 oz paprika

Directions:
Place potatoes and eggs into a large stockpot, fill with enough to cover
just over an inch
above.
Add liquid crab boil and place over a high heat.
Cook until potatoes are tender (about 20-30 minutes).
Once potato and eggs are cooked, drain water from pot.
Peel eggs and all potatoes. Rinse peeled eggs to insure all shell is removed.
Dice potatoes into inch squares and place into a large bowl.
Dice eggs in a similar fashion and add to the potatoes.
Add 1 to 1 cups of mayo to the potatoes and eggs.
Add 2 tbsp of sweet relish and salt & pepper to taste.
Mix to combine.
Sprinkle paprika to the top for color.
Can be served warm or chilled.
