Ingredient -- Preparation Method


-------------------------------Mashed Cooked Sweet Potato -- (about 2 pounds)
firmly packed brown sugar (I use about half this amount)
skim milk
Butter -- melted
vanilla extract
Salt
Egg Whites -- or 1 whole egg lightly beaten
Vegetable Cooking Spray
Topping:
Firmly Packed Brown Sugar
Flour
Chilled Butter
chopped pecans

Combine first 7 ingredients in a bowl, and stir well.

I use the food

Spoon sweet potato mixture into an 8-inch square baking dish coated with
cooking spray.
Combine cup brown sugar and flour in a bowl, and cut in 2 tbsp. chilled
butter with a pastry blender or 2 knives (I use a food processor much
easier!!)until the mixture resemblescoarse meal. Stir in chopped pecans, and
sprinkle over sweet potato
mixture.
Bake at 350 degrees for about 30 minutes.
