Pancakes for four

quantity imperial equivalent


2 egg whites
1 egg yolk
a banana, mango, some lemon rind or a
splash of vanilla extract
300 ml (1¼ cup) milk
240 ml (1 cup) white flour
10 ml (1 heaped teaspoon) baking powder
2.5 ml (½ teaspoon) salt
30 ml (2 tablespoons) melted butter
maple syrup

Heat the maple syrup by putting the bottle in a pot of hot water.

Use three bowls:

1. in a small bowl, beat the egg whites until stiff


2. in a medium bowl, beat the egg yolk, fruit and milk
3. in another medium bowl, sift the flour, baking powder and salt

4. mix the milk mixture into the flour mixture, but not thoroughly: leave small lumps
5. blend in the melted butter, and then the egg whites

6. bring a griddle or large frying pan to medium heat and butter lightly
7. with a ladle, pour 10cm (4”) diameter pancakes onto the pan
8. flip when bubbles form on the top side and cook another couple of minutes
9. serve immediately

Good with syrup, yoghurt and/or fruit salad
