Ingredients

Ingredients for stock:

Water 6 cups

Bay leaf 4

Black cardamom 2

Mint leaves 8

Garlic 6 cloves

Dried ginger 1 small piece

Fennel seeds 1 tbsp

Cinnamon 1 stick

Ingredients for Mutton:

Mutton kg

Onion 1 sliced

Cloves 4

Black cardamom 1

Green cardamom 4

Green chillies ground 2 tsp

Ginger garlic paste 1 tbsp

Yogurt 1 cup

Tomatoes 2

Brown onion cup

Oil cup

Potatoes 4

Rice kg

Cooking Directions

In a pan put all together water, bay leaf, dried ginger, fennel seeds, cinnamon, black cardamom,
mint leaves, garlic cloves and cook for 20 minutes.

Strain the stock and keep aside.

Add this stock to the pan add in mutton with ginger garlic paste, cloves, sliced onion, black
cardamom, green cardamom, ground green chillies and cook till mutton half done.

Now add potatoes, yogurt, tomatoes slice and brown onion, boil rice with salt till half done.

5.

Strain and reserve cup water of the rice.

6.

In a pan spread mutton mixture cover with boil rice.

7.

Sprinkle with reserved water from rice.

8.

Heat oil and pour on top of rice.

9.

Simmer for 15 minutes on low flame, delicious white masala biryani is ready to be served.
