PROTEIN
Proteinsare essential nutrients for
the human body. They are one of the
building blocks of body tissue, and
can also serve as a fuel source.
The most important aspect and
defining characteristic of protein from
a nutritional standpoint is itsamino
acid composition.
Proteinsare polymerchains made of

TYPES OF PROTEIN
I. Fibrous protein:
. These proteins consists of linear thread-like
which tend to lie slide by side to form fibres.
.The intermolecular force of attraction are very
strong & hence fibrous protein are insoluble in
water.
.This proteins are stable to moderate changes
in temperature & pH.

ll. Globular protein:

Globular protein are water soluble.
Sensitive to small changes in
temperature and pH.

STRUCTURE OF PROTEIN
i. Primary structure.
ii. Secondary structure.
iii. Tertiary structure.
iv. Quaternary structure.

PROTEIN FUNCTIONS
Protein is a nutrient needed by the human body
for growth and maintenance.
Proteins are also used in membranes, such as
glycoproteins. Additionally, protein is needed to
form blood cells.
Amino acids, the building blocks of proteins, are
used for building muscle tissue and repairing
damaged tissues.
Protein is only used as anaerobic fuel when
carbohydrates are low, or as aerobic fuel when
lipid resources are also low.[7]

PROTEIN DEFICIENCY
Protein deficiency malnutrition can lead to
variety of ailments including mental
retardation and kwashiorkor .
Symptoms of kwashiorkor include apathy,
diarrhoea, inactivity, failure to grow, flaky skin,
fatty liver, and edema of the belly and legs.
This edema is explained by the action of
lipoxygenase acid to form leukotrienes and
the normal functioning of proteins in fluid
balance and lipoprotein transport.

IMPORTANCE OF PROTEINS
Main catalysts in biochemistry: enzymes
(involved in virtually every biochemical
reaction)
Structural components of cells (both
inside and outside of cells in tissues)
Regulatory functions (if/when a cell
divides, which genes are expressed, etc.)
Carrier and transport functions (ions,
small molecules)
