ALOO SAMOSA

Potato regular Unpeeled
Green peas frozen
Ginger fresh
Garlic fresh
Cumin powder
Cayenne pepper powder
Cumin seeds
Coriander seeds whole
Cilantro fresh
Spring roll wrapper
Onion yellow
Shortening liquid
Oil vegetable

Boil Potatoes in salted water till well cooked. Peel while still hot & mash by hand.
Crackle cumin & coriander seeds in oil, saut onion & ginger & garlic paste.
Add green peas, cumin and cayenne pepper powder and cook on slow heat for few mts. till all the
flavors have infused.
Add coarse mashed potatoes. Cook. Season & finish with cilantro.
Roll wrappers in triangular shapes & stuff with potato mixture.
Close the open ends properly.
Deep fry in shortening and serve with potato chips.
