A Bill to Create a Sustainable Dining Task Force

Whereas, sustainability initiatives and the environment are extremely important to


current and future students at the University of Tennessee Knoxville and the
greater community in which it is placed; and
Whereas, students, campus organizations, and faculty have shown support for
the Real Food Challenge through petitions, open letters, and official statements;
and
Whereas, the level of defined Real Food of the University of Tennessee is not on
par with the student bodys support for sustainable development and concern
regarding issues such as local/community based, fair, ecologically sound, and
humanely sourced food; and
Whereas, a Sustainable Dining Task Force will create a direct avenue for student
involvement in and improvement of dining operations on campus; and
Whereas, this task force would create transparency among the student body and
Aramark, establishing an achievable plan for the next 5 years to enhance
Aramarks sustainable food options and operations on campus; and

Whereas, the goals of the task force would align with the mission statement of
the Office of Sustainability that reads, The Office works to coordinate, manage,
advise and report on sustainable initiatives at UT, through research, data
collection and collaborations with a variety of on-campus and community
stakeholders; and
Whereas, members of the task force would undertake researching analogous
institutions and reporting information that is pertinent to the goals of establishing
actionable goals to implement methods, technology, and purchasing for future
food operations; and
Whereas, the task force will conduct research studies, data collection, and GHG
emission impact reports for actionable goals, which will provide pertinent
information for the Office of Sustainabilitys Climate Action Plan; and
Whereas, a Sustainable Dining Task Force will provide greater student
involvement in setting the tone for campus food purchasing and operations
policy.
Therefore, be it hereby resolved, that a Sustainable Dining Task Force be
established, housed under the Office of Sustainability but including individuals
from the student body, faculty, staff, administration, and representatives of
Aramark.
