TYasthead = A Publication of the Masthead Cove Yacht Club April 1982 THE QUARTERDECK The local newspapers have been providing up-to-the minute coverage of our Town's opposition and action to block the Corps of Engineers from establishing yet another dumping site off Lloyd's Neck. As reported previously, your club has also gone on record to the Corps opposing this poisoning of our waterways. We have now received their final report which contains complete copies of all letters and comments in review of their draft proposal. This report also contains a point-by- point discussion of each respondent's comments with appropriate corrections and clarifications in the text where they agreed with a valid point. They disagreed with or rebutted many comments, too. Since the Connecticut opposition does not appear to be too strong, and as our very own N.¥, State Dept. of Conservation even helped the Corps select a dump site, it is beginning to smell bad for our side (and it will probably smell worse when they start dumping), But persevere! To summarize the results of the March 9 meeting, the approved bylaws changes will be incorporated and complete up-dated copies made available through Stan Rockefeller; the 1982 rosters should be ready by the time you read this; and although the proposed doubling of dues for 1983 was defeated, a motion for an inflation-induced $15.00 dues increase was tabled until the November Business Meeting. Arne Johnson will be mailing each one of you a computer printed card, To register the procedure is to simply answer the questions and Mail It Back. The Race Committee will be in touch with you by mailing the direc- tions or by phone to clear up any questions we may have about your boat. NOW HEAR THIS, "YOU MAY NOT RACE IN THE FIRST RACE UNLESS YOUR FORM IS POSTMARKED BY THE POSTED DEADLINE. NO EXCEPTIONS." L€ your form is postmarked late but within sufficient time for the second race then you will be placed on the scratch sheet from the second race on and so on. ‘The reason for this rule is that it becomes a wi and wolly fire drill to get you the scratch sheet at the last moment and it's not fair to the committee boat or the Race Committees in general. Formations of divisions will take place after receipt of registrations. Please study the racing instruc- tions/directions very carefully. Note that new courses have been added and check the starting ti of division. tn addition, check h ittee boat early as that eases their burden considerably and, check over the Racing Rules as that will ease everyone's burden considerably. TERN 17-31 duly/Newport & Eastern ae Gerry Leuber ,Capt. ,271-2185 As Cruise Captain for the Labor Day Weekend CRUISE HADDOCK, I shall use the balance of this article to fill you in on the particulars. As has become traditional, MC¥C has planned a Club Cruise to Stratford and attendance at the American Shakes- speare Festival each Labor Day Weekend. This has always been a great late summer weekend for the Club to get together for a relatively short cruise plus attendance at a truly marvelous theater experience. However, slip reservation problems have occurred due to late applications. This year we will remedy that problem by getting our reservations in early. This year the Shakespeare Festival Presentation on 4 September will be “Hamlet” by a really great playwrite. A block of good seats, all together in the center orchestra, have been promised if all reservations are received with a $5 per seat deposit by 1 May 1982. The total price per seat is $19.50 and is payable by 15 July. As to marina reservataions, the Stratford Marina, within walking distance of the theater has promised to guarantee slip availability for the Labor Day Weekend providing that reservations are received accompanied by a $10 deposit for each boat no later than, coincidentally, 1 May, 1982. The rate for each slip is 904 per foot of overall boat length. This has always been a great and well attended cruise so let's make this Year's a topper. Mort Howard, Fleet Captain - Cruising (Continued on page 6) GALLEY GOURMET Last month I suggested plastic milk containers as a method of transporting and sorting on-board meals. One obvious flaw to this method is the difficulty one encounters in trying to stuff large pieces of meat through the bottle opening. Well there is another easy way to transport (and cook) food prepared at home, and this makes use of "seal-a-meal" or "boiling bags". The sealer and various size bags are fairly inexpensive and wellworth the investment if you prefer relaxing on deck to pot scrubbing below. Here are several receipes which are delicious when frozen, sealed in a boiling bag, and then reheated. Meatballs in Burgundy Sauce (These can be used as appetizers or served over noodles for the main course, ) 1b. ground beef 1b. ground pork cups bread crumbs eggs, beaten medium onion, grated clove garlic, crushed 1/4 cup milk 2t. salt 1/2 t. each pepper and allspice. Combine all ingredients and form into balls. Bake 20 minutes at 350. Sauce: 1/4 cup meat drippings blended with 1/4 cup flour in large saucepan. Add 1 cup Burgundy and 1/2 cup water and 1 t. beef extract. Cook, stirring until thickened. Add meatballs and cook 10 minutes. When completely cool, seal into plastic bag. Chicken Haisin 4 boneless chicken breasts, cubea @ 1/2 cup diced water chestnuts 1/2 cup diced mushrooms 1/2 cup diced green pepper 17, sherry 1 T. cornstarch 1 T. Soy sauce Mix sherry, soysauce, and cornstarch and combine with chicken. Saute vegetables in oil until crisp-tender. Add chicken and fry until it turns color, Remove from heat and add 2 T. haisin sauce. Cool and seal.
