Onion Soup (Chef G.

Ramsey)
Main Ingredients

4 large onions, chopped


2 tsp olive oil
1 tbsp butter
4 slices baguette (Typical France Bread) or crusty bread
40g grated Gruyere, Swiss or Cheddar cheese (Cottage cheese,
maybe)
Black Pepper to taste
1L beef stock made from a Knorr Stock Cube or Stock Pot (dont have
to add, replace with red wine or apple vinegar.)

Method

Heat the oil and butter in a deep saucepan and sautee the onions for a
few minutes, stirring occasionally.
Reduce the heat and cook the onions for 2030 minutes or until golden
brown, stirring frequently to prevent burning.
Move the onions to a saucepan or casserole dish and pour over the
stock. Season with pepper and simmer partially covered for 20
minutes.
Toast a few rounds of crusty bread for chunky croutons.
Spoon the soup into oven-proof serving dishes. Top each crouton with
grated cheese and pop one or two into each bowl.
Place under the grill for a few minutes until golden brown. Serve
immediately.

Make a slice of crispy bread

Slice a 2/4 french bread, loaf bread ( may be)


Olive oil, or butter.
Garlic, crush it into pieces.
Fried it with olive for about 60 sec
Put the bread inside the pan before the garlic turn brown.
Fried it for about 2 min.
Take it out of pan for cooling, ready in 4 min

Serve on top of soup, and put a slice of blue cheese on top.
