EASY ALMOND COOKIE RECIPE

INGREDIENTS

All purpose flour - cup


Ground almonds (or almond meal) - cup
Baking powder - teaspoon
Salt - teaspoon
Unsalted butter - cup, soften at room temperature
Granulated sugar - cup
Thick yogurt - 1 tablespoon
Vanilla extract - teaspoon
Almond extract - teaspoon
Slivered almonds -few for garnishing

INSTRUCTIONS
1. Mix in first four dry ingredients in bowl.
2. Cream butter and sugar in another bowl till it gets light and smooth. You can use
wire whisk or use hand mixer or stand mixer.
3. Then beat in yogurt and both extracts.
4. Add flour mixture to butter.
5. Mix in with spatula till all comes together.
6. Chill into the refrigerator for about 20 minutes.
7. Meanwhile dough is chilling; preheat the oven to 350 degree F or 180 degree C
for at least 10 minutes.
8. Line a baking sheet with parchment paper or grease it well with butter or spray it
with nonstick spray.
9. Once dough is chilled and not sticky anymore, make tablespoon sized round
balls, arrange them into a cookie sheet few inches apart from each other. Because they
will spread as they bake.
10. Press slivered almond or whole almond on top of each cookie.
11. Bake into preheated oven for 15-17 minutes. Cookies are ready when the edges
start to golden brown.
12. Let cool into the pan for 10 minutes then remove it to wire rack to cool
completely.
