For the batter:
1 cup besan 1 tsp red chilli powder 1 tsp ajwain salt to taste Method: In a blender, grind the green chillies, garlic, ginger and coriander seeds to make a paste. Heat some oil in a pan and add the mustard seeds. Add the prepared paste, turmeric powder and salt and mix well. Lastly add the mashed potatoes and mix well. Remove from heat and add some finely chopped coriander leaves. Make small round balls. For the batter: Make the batter using some water to a runny consistency. Dip the potato balls into the gram flour batter and arrange then on the wire rack. Pre-heat the oven to 220 C. Place a greased wire rack on a baking sheet for the vadas. Bake them for 20-25 minutes; the vada should have a golden crust to them. Once done, they are ready to be served with fresh pavs.
