ALU GOBI MASALA

Peel and cut the potatoes into quarters. Cut the


cauliflower into medium pieces and soak in hot water.
Heat ghee, add cumin seeds and finely chopped onion.
Saut till light brown.
Add ginger-garlic paste and saut again till light brown.
Add all spices and fry. Add pureed tomatoes and cashew
nut paste. Stir fry till oil leaves the masala.
Add potatoes, salt and water enough to cook potatoes.
Cook covered on a medium fire, till potatoes are 3/4 th
cooked. Add cauliflower and cook again till well cooked
and the gravy is thick.
Serve hot garnished with chopped coriander leaves.
