Shushi bites

INGEADENTS:
1 cup of short grain rice
2 TBS of rice vinegar
2 TBS of castor sugar
1 TBS of salt4 sheets of Nori seaweed
a cucumber, peeled, seeds removed and cut into small
pieces.

1 avocado, peeled, seeds removed and cut into small pieces.
Cooking time-2
150g of smoked salmon or tuna

1. Preheat the oven to 150 degrease Celsius.


2. Get a medium saucepan and put 1 cups of water in it to
boil.
3. In a bowl mix the rice vinegar sugar and salt. Blend the
mixture into the rice.
4. On a medium baking tray, heat the Nori in the oven for 1-2
minutes until warm.
5. Centre one sheet of Nori on a bamboo Shushi mat, spread
a thick layer of rice over the nori and then press it to make
it a thin layer.
6. Arrange of the sea food, avocado, cucumber and ginger
of your choice in a line down the centre of the rice.
7. Lift the end of the mat, and gently roll it over the
ingredients, pressing gently. Then roll it forward to make a
complete roll. Repeat with remaining ingredients.
8. Cut each roll into 4-6 pieces using a wet knife.
