Chocolate Banana Muffins

Ingredients:

1 cup Flour
¾ cup Whole wheat flour
1 ¼ tsp. Baking powder
½ tsp. Salt
1/3 cup softened butter
2/3 cup sugar
2 eggs
2 tbls. Whole milk
1 tbls. Vanilla extract
1 cup mashed ripe bananas (approximately 2)
¾ cup semi-sweet chocolate chips
½ cup Chopped pecans

Directions:

Preheat the oven to 350˚. Spray 12 count muffin pan with non-stick cooking spray.

Using a large bowl, mix together the flours, baking powder, and salt. Set aside.

In the mixer, beat together the butter and the sugar until creamy. Make sure to scrape
the bowl frequently as you mix so all the sugar is incorporated.

Next, add the eggs, milk, and vanilla to the mixer until blended. Add in the mashed
bananas. Then add the flour mixture and mix well.

Add in the chocolate chips and pecans. Fill muffin cups ¾ full (will make
approximately 9). Bake at 350˚ for 22-25 minutes or until a toothpick comes out clean.
Cool completely in the pan on a wire rack.
