Saffron, pistachio and cardamom kulfi Tartlet

Kulfi or Qulfi is a popular flavored frozen dessert made from milk which originated in South Asia and
is popular throughout neighboring countries in the Middle East.
Unlike other ice cream, kulfi takes a very long time to melt. It comes in various flavors, including
pistachio, rose, mango, cardamom (elaichi), saffron.

Serves..24 mini tartlets

1 1/2 Cup whole milk


1 1/2 Cup Condensed milk
4 whole Cardamom pods
3 saffron threads
1/8 Cup. Chopped Pistachios
24 Mini Tartlet cases Blind baked
100g Slivers of peeled almond

Preparation
Pour the Whole milk and condensed milk into your pan and add the Cardamom pods. Heat on medium-
flame.
Once the milk is warm, take 2 tbs. of milk and soak the saffron for a few minutes, then pour the
saffron infused milk back into the pan.
Stir the liquid often while it all cooks down to 1/3 of the liquid.
Then strain out the cardamom pods, add the sugar and pistachios and cook for a few more minutes.
Churn the rich saffron cream for a couple of minutes.
To serve: Spoon generous amounts of the Kulfi mixture into each tartlet case, and serve chilled with a
sliver of flaked almond.
