Soup with mince meat balls

( for 5 servings)

Ingredients:

350 g minced beef


2 tablespoons of rice
1 carrot
1 parsley root
1 small celery
1 big onion
1 potatoes
1 capsicum
½ bunch of parsley
450 g tomatoes
500 ml bortsch
Salt, pepper

Preparation:
1) Put 2 l of water to boil at high heat. Add the cleaned and chopped vegetables
(keep1/3 onion for the mince meant balls).

2) The mince meat balls: the remaining onion is mixed with the meat, the rice, ¼ of
the parsley leafs, salt and pepper

3) Wet your hands and make some small balls with the diameter of 3-4 cm. After
making them, add them in the pot, where the vegetables should be almost cooked.

4) Let them boil together at high heat for 15-20 minutes. Check if the vegetables and
the meat mince balls are cooked and add the chopped tomatoes and the bortsch.
Add water if needed and let them boil for another minute. The parsley can be
added in the pot after the heat was turned off, or directly in the plate.
