½ lb (225g) potatoes 2.5oz (65g) flour 3 tablespoons melted butter ½ teaspoon salt
Method:
Boil the potatoes until soft then mash while they
are still warm. Add the melted butter and salt. When adding flour just add enough to make it a pliable dough – not making it too dry. It really depends on what type of potato you have picked.
Turn out onto a floured surface and roll until
about quarter of an inch thick. Cut into circles (about 6 inches) and then cut into quarters.
Prick all over with a fork and cook in a lightly
greased pan. Cook each side of the scone for about 3 minutes or until golden brown.
