Chicken Pandan Ingredients:

• ½ kg chicken thigh fillet, cut into large bite


size pieces

• 1 fresh pandan leaf, chopped


• 16 pieces pandan leaves, washed
• oil for deep frying

Marinade: Combine in a bowl -

• 3 tbsp MAGGI Oyster Sauce


• 2 tbsp NESTLE All Purpose Cream
• 1 tbsp sesame oil
• 2 tbsp chopped garlic
• 1 tbsp chopped ginger
• pinch of freshly ground black pepper

• 1 tbsp all purpose flour

Sauce: Combine-

• 1 ½ tbsp sugar
• 1 tbsp water
• 1 tbsp patis
• 1 tbsp. calamansi juice
• 1 tbsp MAGGI Savor, Chili
250 grams chicken thigh
Cilantro (optional)
1/4 tbsp garlic
1/2 tbsp oyster sauce
1/2 tbsp Knorr seasoning
1 tbsp brown sugar
1/4 tsp salt
1 tbsp cornstarch
1 tbsp sesame oil
Pandan leaves(fragrant screwpine) for wrapping

• 500 g (1 lb) of chicken thigh fillets


• about ten stems of cilantro (coriander), roughly chopped
• 5 cloves of garlic
• 1 teaspoon of white pepper
• 2 teaspoons of brown sugar
• 1 tablespoon of cornstarch
• 1/2 teaspoon of salt
• 3 tablespoons of oyster sauce
• 1 tablespoon of sesame oil
• vegetable oil for frying

• 400 g chicken drumsticks, deboned and skinned


• 1 large pandan leaf, for wrapping

Ground

• 3 shallots
• 2 cm knob young ginger
• 4 cloves garlic
• 1 stalk lemongrass, sliced
• 3 dried chilies, soaked till soft

Seasoning

• 2 teaspoons light soy sauce


• 2 teaspoons Worcestershire sauce
• 1 teaspoon fish sauce
• 1/2 teaspoon ground turmeric
• 1/2 teaspoon salt
• 1 teaspoon sugar
• 1/2 teaspoon pepper
• 1 tablespoon cornflour
• 1/2 cup thick coconut milk
• canola oil (for deep frying)

Directions:

Prep Time: 40 mins

Total Time: 55 mins

1. 1 Cut chicken meat into 7cm x 2.5cm thick slices.


2. 2 Combine ground ingredients with the seasoning ingredients and marinate the
chicken pieces with it.
3. 3 Leave to stand for two to three hours.
4. 4 Add coconut milk and mix well to blend.
5. 5 Wrap two pieces of chicken with a pandan leaf.
6. 6 Secure with a toothpick.
7. 7 Deep-fry pandan-wrapped chicken in hot oil until chicken is cooked through.
