Activity: Ice Cream Manufacturing Process Suggestions to Speaker

It may be of help to put the Flow Diagram on an overhead projector and write the process operating conditions on it as the students follow along on their own copies of Flow Diagram. This may help them understand how conditions change from one piece of equipment to the next, and will help them solve the problems. This activity can be given to high schoolers, since solving the problems will require some algebra, or solving systems of equations. For middle students, one suggestion is to give a group of students one of each of the questions. The competition between groups might provide an incentive, or you can give candy rewards for each completed question. You (or any presenter) could circulate between the groups to help them through the tough stuff (like the algebra). Since they are in groups, they may feel more confident in solving the problem. Furthermore, you could reinforce that engineers work in groups to solve problems. It might help to talk about how being in a group to solve the problem made it seem less formidable. If one group finishes their question before the allotted time, you could give them another question. You could end the session with each group being rewarded only for right answers, or by asking a member of each group to provide a summary of the question and answer.

Drawing reading questions: What is pasteurization temperature? What mix storage temperature? What is ice cream storage temperature? When are fruits and nuts added?
