Grapes 70% Merlot 30% Cabernet Sauvignon This region is set on a thick, rather broken, layer of limestone, with a topsoil of ironrich loess, ideal for growing Merlot grapes and clay-limestone soil, excellent for Cabernet Sauvignon. Vineyards were planted in the Haut-Benauge part of the Bordeaux appellation by monks providing shelter to pilgrims on the road to Santiago de Compostela, between the Dordogne River to the North and the Garonne River to the South. The special feature of this vineyard for over thirty years now has been organic viticulture! No weed-killers, pesticides or chemical fertilisers are used, and the estate is certified organic every year. Wines resulting from biological agriculture, profiting from the standard "Ecocert", fruits of a long dialogue and deliberation, in order to answer an increasing request of the customers. We believe in healthy, delicious products: totally natural quality! Vinification The grapes are picked carefully, then de-stemmed, fermented in vat and held there for ten days to two weeks to enhance complexity and extract. The wine is aged for a few months and bottled in the late winter following the vintage. Tasting This wine has a lovely red colour, with purplish highlights. The powerful bouquet is full of red berry fruit, with hints of prunes. Serving suggestions This Red Bordeaux is delicious with red meat, stews, snacks and cheeses and will age perfectly for between 5 years
