1 ½ measures/ 6 tsp sloe
gin
½ measure/ 2 tsp apricot
brandy
½ measure/ 2 tsp lime
juice
Shake all the ingredients
well with ice, and strain
into a chilled cocktail
glass. Garnish with a slice
of lime, and perhaps a
sliver of apricot.

AKHUNI WITH TOMATO
PLUM
(Fermented Soya Beans with Tomato)
FLAN
INGREDIENTS:
Pastry Filling
1 ½ cups plain flour 10 to 12 firm ripe plums
1 tbsp castor sugar Castor sugar
90g butter or margarine Redcurrant jelly
Cold water Cream or ice- cream
METHOD:
1. Stir together flour and castor sugar, cut
butter or margarine into small pieces, add,
and rub in until mixture resembles bread
crumbs. Add enough cold water to mix to
a firm dough, knead lightly, form into a ball.
Wrap and chill for 20 to 30 minutes.
2. Roll out the dough to fit into a lightly
greased 20cm tart plate, prick all over and bake in a moderately hot oven for 15 to 20 minutes.
