LETTER FROM THE CEO
THIS TIME OF YEAR gets a lot of bad press but dont believe what they tell you about autumn: more cases of depression, your hair falls out, post-holiday blues. Ridiculous! This is the perfect time to make plans for the year ahead, a time to set off down new paths and enjoy the gorgeous reds and browns gifted to us by Mother Nature. I would like to take this opportunity to thank you for the trust you have placed in Paradores this summer. We have more than enough reasons to be optimistic in these tough times of crisis. 5,805 more rooms were occupied in July and August than last year (up 2.22%) and the number of covers served in our restaurants rose by 5,317 (up 1.09%). Whats more, we have welcomed 6% more foreign guests to our establishments. All this, I might add, amid an economic crisis that simply wont let up. The coming four months will provide yet more reasons for us to feel satised. We will ofcially re-open the Parador de Villafranca after ten months of renovation work; work on the new Parador de Cadiz continues, ahead of its opening in 2012; and the nal touches are being made on the work to x the damage caused to the Parador de Lorca after the earthquake. And theres more. We are continuing with our museumication process and the Parador de San Marcos in Leon and the Parador de Cangas de Ons in Asturias will be joining the list of Parador-Museums that already include Santo Estevo, Santiago, Granada, Oropesa and up to six historic Parador hotels in the chain. We are also keeping an eye on the latest technology and will shortly be presenting the Paradores mobile apps and a new look for our website. We have prepared a wide range of autumn ideas for this edition to encourage new experiences: a trip to enjoy the best look-out over the Aran Valley from the Parador de Vielha; getting lost in the mediaeval castle that is the Parador de Alarcn; and discovering impossible landscapes in Antequera. We also speak with the genius Antonio Lpez who assures us he has returned to the essence of the human form. As part of our constant commitment to new technology, we have also included BIDI codes on some pages. If you take a picture of these codes with a mobile, you will also be able to watch and listen to extra content from this magazine. As you can see, we are getting even closer to our readers. NO SE DEJEN LLEVAR por lo que dicen del otoo. Es una estacin con muy mala prensa: Aumentan las depresiones, se cae el pelo, llega el sndrome posvacacional. Ni hablar! Este es el momento de hacer proyectos de cara al curso que tenemos por delante. Es tiempo de emprender nuevos caminos y de sumergirse en los hermosos tonos ocres que nos brinda la naturaleza. Desde estas pginas quiero darles las gracias. Gracias por la conanza que han depositado durante este verano en Paradores. Tenemos motivos de sobra para ser optimistas en estos duros tiempos de crisis. En julio y agosto se han ocupado 5.805 habitaciones ms que el pasado ao (un 2,22%) y se ha incrementado el nmero de cubiertos servidos en 5.317 (un 1,09%). Adems, ha aumentado en un 6% el nmero de clientes extranjeros que han acudido a nuestros establecimientos. Y todo, insisto, en medio de una crisis econmica que no da respiro. En estos cuatro meses que tenemos por delante habr an ms motivos para sentirnos satisfechos. Inauguramos ocialmente el Parador de Villafranca, abierto al pblico tras su reforma hace diez meses; continan las obras del nuevo Parador de Cdiz, que abrir sus puertas en 2012, y tambin se estn ultimando las obras para subsanar los desperfectos causados por el temblor de tierra en el Parador de Lorca. Y hay ms. Seguimos adelante con nuestro proceso de museizacin y antes de nal de ao los paradores de San Marcos en Len y Cangas de Ons en Asturias se unirn a la lista de Paradores-Museo de la que ya forman parte Santo Estevo, Santiago, Granada, Oropesa y hasta seis paradores histricos de la Red. Tambin seguimos pendientes de las nuevas tecnologas y en breve les presentaremos las nuevas aplicaciones de Paradores para los telfonos mviles y la renovacin de nuestra pgina web. Hemos preparado en este nmero un amplio abanico de sugerencias para que el otoo nos depare nuevas experiencias: un viaje para disfrutar del mejor mirador para divisar el Valle de Arn, como es el Parador de Vielha; perderse en el castillo medieval del Parador de Alarcn o descubrir los paisajes imposibles de Antequera. Tambin hemos hablado con un genio, con Antonio Lpez, que asegura haber regresado a la esencia, a la gura humana. Descubrir el Parador de Alarcn, Marqus de Villena, de la mano del prroco de la localidad, don Luis, aumenta las gratas sensaciones de las que el viajero disfruta en este castillo medieval. El placer, adems de fsico, es espiritual, gracias a las historias que l ha estudiado y vivido en primera persona desde que se cre el Parador, en 1966. Leonor Ventura Pablo Sarabia

modamente sentados en la cafetera del Parador, al calor de un clido atardecer veraniego, don Luis, el prroco de la localidad conquense de Alarcn, va desgranando sus vivencias en este Parador, el ms pequeo de la Red, con tan solo 18 habitaciones: Por aqu han pasado muchos personajes conocidos apunta. Me acuerdo de Buuel o de Dal... incluso de Julio Iglesias, cuando estuvo rodando unas secuencias de la pelcula La vida sigue igual. Por no hablar de polticos, pintores, escultores. Quizs por estos ltimos, los gruesos muros de este castillo medieval estn decorados con pinturas o litografas de reconocidos representantes espaoles del arte moderno como Chillida, Tapies, Valds y Martnez Novillo.

Don Luis comienza su relato rememorando los orgenes del Parador. Llegu aqu en 1961 y el Parador se inaugur en 1966. El castillo estaba prcticamente abandonado, y las obras de remodelacin duraron tres aos. En aquella poca, en el pueblo haba una grandsima actividad, tena casi un millar de habitantes, frente al centenar que ahora vivimos de forma permanente, aade no sin cierta nostalgia. Pero la localidad de Alarcn, en un alto de la meseta castellano manchega, abrazada por las aguas del ro Jcar, sabe ya de etapas de apogeo y declive, y as lo atestigua su historia. Fundada por los romanos, durante la Reconquista, en la Edad Media, tuvo un especial protagonismo. Ocupada por los moros aqu se refugi Mohamed el Feheri, hijo de uno de los

primeros reyes musulmanes de Toledo, explica nuestro cicerone, las huestes del rey Alfonso VIII tardaron nueve meses en su reconquista, hasta ser tomado en 1184. De ah que la localidad tenga un triple amurallamiento con mltiples torres de viga, de las que algunas quedan en pie. En un extremo de tan esplndido paisaje se alza el castillo, con su esbelta torre del Homenaje presidiendo el entorno. De esta poca data la gesta de Hernn Martnez de Ceballos, que se vali de dos dagas vizcanas para escalar los muros del castillo y permitir as el asalto, rememora don Luis. Posteriormente Alarcn, y por tanto su castillo, conocieron una poca de esplendor, incluso fue dotado de Fuero Propio, y se edic un Hospital de Peregrinos. Cuentan que antes de la decisiva batalla de las Navas de Tolosa (1212) se estableci all una corte temporal. Ms tarde la propiedad del castillo pas al seoro de Villena, uno de cuyos ms insignes miembros fue el

Infante don Juan Manuel (1282-1348), autor de El conde Lucanor, conjunto de cuentos moralizantes y una de las obras clave de la literatura espaola del medievo. Adems de gran caballero, fue un prolco escritor y gran apasionado de todo tipo de conocimiento. De su acin por observar las estrellas todava se conserva la Torre de los Alarconcillos, una de las que se divisa desde casi todos los rincones del castillo, comenta don Luis. En siglos posteriores, Alarcn dej de ser un importante enclave estratgico y, por consiguiente, cay en el olvido, as como su conjunto monumental. Sin embargo, hoy en da, trasladarse a esta localidad conquense, alejada de las grandes vas que surcan la Pennsula Ibrica, supone todo un deleite sensorial, un volver al pasado con punto de encuentro en el Parador. Pequeo y recoleto, el patio central, de forma triangular con su pozo, sus altos abetos y los recordados sicomoros por muchos conocedores del lugar, apunta el prroco, ofrece el mejor comienzo para este paseo. A la derecha est la cafetera, en su doble versin de caf as lo reejan estas obras de Manolo Valds y de acogedor saln con chimenea. Ms all se encuentra el comedor, presidido por una obra de Antonio Tapis, con sus altas bvedas, sus muros de piedra sin fondo y, cmo no, con la posibilidad de degustar los ms ricos manjares de la zona: carnes de aves y caza, morteruelo, pisto manchego ricas recetas que se complementan con la amplia gama gastronmica que hoy se ofrece en Paradores.

was transferred to the Villena estate, one of whose most illustrious members was Prince Don Juan Manuel (1282-1348), author of El Conde Lucanor, a collection of moralizing tales and one of the key works of Spanish literature from the Middle Ages. In addition to being a knight, he was a prolic writer and was an enthusiast for all kinds of knowledge. Thanks to his passion for observing the stars, we still have the Alarconcillo Tower, one that can be seen from almost every part of the castle, says Don Luis. In later centuries, Alarcn ceased to be an important strategic position and, consequently, fell into oblivion, together with its monuments. However, today, visiting this town in Cuenca, away from the main roads that cross the Iberian Peninsula, represents a real delight for the senses, a trip to the past with the hotel as the core element.

oco ha cambiado el valle de la Perna desde que los canteros romnicos labraron a nales del siglo XII la iglesia de San Salvador de Cantamuda. En estas montaas del norte de Palencia todava bullen, como en la Edad Media, el ciervo, el lobo y el oso pardo. Y algunos de los rboles que habitan aqu son anteriores al descubrimiento de Amrica. Ver amanecer en el Parador de Cervera y atardecer en el puerto de Piedrasluengas es una experiencia histrica en todos los sentidos. Es viajar a los tiempos de Alfonso VIII. En su reinado (1158-1214) brotaron las iglesias y los

monasterios en estos montes como brotan las setas en una maana soleada de otoo: ms de 150 templos romnicos, la mayor concentracin de edicios de este estilo en Europa. Los monasterios de Santa Mara la Real y San Andrs de Arroyo y las iglesias de Vallespinoso de Aguilar y Moarves de Ojeda son, junto con San Salvador de Cantamuda, obligada visita. No debe de haber en el mundo muchos hoteles con mejores vistas que el Parador de Cervera, el cual domina, desde un alcor, el embalse de Ruesga y todas las cumbres de la Montaa Palentina: desde el pico Almonga (1.519 metros), que est justo enfrente, hasta la mole piramidal del Espigete (2.450 metros) y la verdinegra del Curavacas, mxima altura del macizo (2.520 metros). Llenos los ojos de montaas, y el estmago, del chorizo de jabal y del salchichn de venado que hay para desayunar, comenzamos nuestra ruta bajando a Cervera de Pisuerga, que dista 2,5 kilmetros, para luego seguir la carretera de Piedrasluengas o de Potes o CL-627, que de las tres formas se conoce. Views like that to be enjoyed at the Parador de Cervera are few and far between. From this hilltop position, guests can see the Ruesga reservoir and the highest peaks in the Palentine Mountains: the nearby Almonga (1,519 metres), the pyramid shape of Espigete (2,450 metres) or the dark greens of Curavacas (the highest part of which reaches 2,520 metres above sea level). Having lled our eyes with mountain views and our stomachs with wild boar chorizo and venison salami for breakfast, we begin our route by descending from Pisuerga to Cervera (2.5 km) to then follow the Piedrasluengas or Potes road (a.k.a. the CL-627).

El bosque se abre y aparece el pueblecito de Vaes, con su orla de prados y su iglesia cigeera, pegado al embalse de Requejada, donde se remansan las aguas del recin nacido Pisuerga y se despejan las cumbres entre las que da sus primeros pasos. De Vaes sale una senda que, en media hora, sube hasta el robln de Estalaya, un roble albar de 9,80 metros de talle y ms de 500 aos de edad que se libr hace 50 de una tala inmisericorde y hace 30 de un incendio intencionado. The village sits next to the Requejada reservoir that collects the spring-fresh waters from the river Pisuerga and reects the mountains that loom above. A trail departs from Vaes that reaches the Great Oak of Estalaya in half an hour. This Sessile Oak is over 500 years old and stretches 9.8 metres into the sky. It narrowly escaped being cut down 50 years ago and survived an intentional re 30 years ago. Indestructible nature.

Besides the magnicent bell gable, its greatest feature is the stone altar atop seven columns with capitals and decorated with a variety of geometric motifs, leaves and owers. Nada ms cruzar el Pisuerga, la CL-627 trepa rauda por un espeso robledal que, segn dicen, es el tipo de monte que gusta a los osos. Hay una pea del Oso y hay una senda del Oso. Pero los plantgrados no se dejan ver. Lo que s se ve es un amplio panorama de la Montaa Palentina desde el mirador de las Matas, al lado mismo de la carretera. Once across the river Pisuerga, the CL-627 winds through a dense oak forest which, so they say, is the kind of mountain environment most popular with bears. The names Bear Peak and Bear Trail must come from somewhere but the animals themselves remain hidden from sight. What can be seen, however, is an extensive panorama of the Palentine Mountains from the Mirador de las Matas viewing point located right next to the road.

La palabra safari signica viaje en suajili y, durante mucho tiempo, llev a los cazadores de animales salvajes a frica. Ahora, el safari fotogrco sustituye el rie por la cmara. l origen de todo est en el mar. Hace casi veinte aos, los buceadores dieron la voz de alarma. Algunas especies marinas estaban empezando a desaparecer. Entonces, un grupo de deportistas de pesca submarina puso en marcha una nueva prctica deportiva que consista en pescar imgenes de especies marinas con cmaras fotogrcas. Naca as, exactamente en Sicilia (Italia) en 1994, la Copa del Mundo de Safari Fotogrco. Ese paso de cambiar la captura por la documentacin inspir a muchos deportistas y amantes de la naturaleza y de ah surgieron nuevas manifestaciones. Desde la competicin deportiva a los paseos para acionados de la fotografa, la caza fotogrca ofrece muchas posibilidades. Como modalidad deportiva, tiene su representacin ms importante en Espaa en el certamen de Safari Fotogrco de la sierra de Baza, en Granada (www.sierradebaza.org). Lleva celebrndose ya 15 aos y su director, Jos ngel Rodrguez, es quien recuerda su origen en la pesca submarina. l mismo practicaba, por entonces, la pesca con apnea y ahora es todo un experto con el objetivo en tierra. Fuimos pioneros, y no solo en Espaa, pues han llegado a copiarnos en los pases ms recnditos del mundo. En el safari fotogrco se mezclan cualidades artsticas y fotogrcas con otras deportivas, como capacidad de orientacin y navegacin por la montaa, conocimiento de la naturaleza y senderismo. En cuanto se abre el plazo, la demanda es enorme, seala Jos ngel. Compiten unas 75 personas, pero siempre hay que abrir la lista hasta llegar casi a los 90 partici30

pantes. Cada competidor, armado con su cmara y accesorios, saldr al campo en busca de una lista de objetivos de caza: no solo animales, sino tambin ora, paisajes y hasta arquitectura popular. La competicin se realiza durante dos das y el reglamento recoge toda la dinmica y desarrollo. Una cmara fotogrca requiere un acercamiento a la presa por lo menos diez veces mayor que si se lleva un arma de fuego. Para ello, es necesario conocer al animal, sus costumbres, su ecosistema y, nalmente, cuando est a tiro, encontrar la luz adecuada. Una vez conseguidas las piezas, el cazador vuelve a la base para hacer entrega de la tarjeta de memoria, despus de realizar una seleccin del material grfico. Un jurado (compuesto por reputados fotgrafos de naturaleza de Espaa) supervisa, valora y premia los trabajos. El xito de este safari en la sierra ha dado pie a una nueva modalidad: el safari urbano por

La prxima cita del Safari de la Sierra de Baza ser del 21 al 23 de octubre y volver a repetirse en primavera para que el certamen por la ciudad se celebre en el otoo de 2012, adelanta Jos ngel. La fotografa de naturaleza gana adeptos. De esta tendencia se han dado cuenta algunas empresas rurales que han visto cmo sacarle partido a muchas ncas particulares y, tambin, a nivel institucional, en algunas zonas protegidas, como parques naturales y reservas biolgicas. Es el caso de la empresa Greenextremadura (www.greenextremadura.com), en la Finca la Parrilla (en el parque de Monfrage, Cceres): Creamos las mejores condiciones posibles para la obtencin de la mayor cantidad y, sobre todo, la mejor calidad de las imgenes, con el montaje de hides (escondites), preparacin de situaciones como carroa, avistamiento de nidos, etc., explica Rafa Ruiz. La actividad suele denominarse Fotografa desde hide. El trabajo de campo lo realizan naturalistas profesionales y el fotgrafo multiplica sus posibilidades de obtener resultados en poco tiempo. verything started in the sea. Divers rst raised the alarm twenty years ago when they noticed certain marine species were starting to disappear. A group of recreational underwater shermen then began a new sport that consisted in shing for pictures of marine species with a camera. That was how, in Sicily (Italy), the Photo Safari World Cup was born in 1994. That step - swapping capture for documentation - was an inspiration for many sportsmen and nature lovers, and other new events began to spring up everywhere. From sports competitions to fashion shows for photography fans, photographic hunting offers

many possibilities. As a form of sport, the quintessential photographic hunting event in Spain is the Sierra de Baza Photo Safari in Granada (www.sierradebaza.org). It has been going for 15 years now and its director, Jos ngel Rodrguez, remembers how it all began with underwater shing. He too used to practice underwater fishing back in the day and has now become an expert, albeit with his lens on solid ground. ecientemente apareci en un diario de difusin nacional una noticia que considero verdaderamente relevante. Se trata de un estudio realizado por investigadores noruegos que arman que el hecho simple de asistir y participar de manera ms o menos activa en eventos culturales, lleva a la gente a sentirse mejor y menos propensa a padecer estrs, ansiedad y depresin. Me interesa esta noticia porque para los profesionales que tratamos a diario en nuestras consultas a personas que padecen graves crisis de ansiedad o padecen un estrs crnico (causa del 85% de todas las enfermedades) est claro que hay alternativas y soluciones de extraordinaria ecacia para aliviar y hasta curar dolencias psicofsicas tan graves y frecuentes como las mencionadas y no se les concede la importancia que merecen porque casi siempre son desconocidas para el gran pblico. Merece la pena profundizar en este tema tan actual como interesante para el bienestar de tantas personas estresadas, angustiadas, preocu36

padas, esclavas de la prisa, de la agitacin reinante, de los agobios y de las incontables exigencias cotidianas que no dejan tiempo para desconectar, relajarnos y sentir, al menos por unas horas, el necesario sosiego fsico, mental y emocional que nos devuelva a la verdadera vida sana y tonicante, la que nos reconforta y nos conere verdadera plenitud. Llevo cuatro aos entrevistando a cuantas personas positivas y entusiastas mayores de noventa aos me voy encontrando por toda Espaa con motivo de las distintas conferencias y talleres que imparto sobre recursos humanos e inteligencia emocional aplicada a la vida. Lo que les mantiene vivos y ms felices es su espritu renovador y creativo que les hace sentirse jvenes y emprendedores, aunque pasen de los noventa. Por qu asistir a eventos culturales y participar en ellos lleva a cualquier persona a sentirse mejor, sobre todo si est estresada o deprimida? La respuesta desde la ciencia es que estas personas, al centrar su atencin e intencin en nuevas experiencias graticantes y bellas como puede ser asistir a un concierto, a la representacin de una obra de teatro, a una pelcula de cine frum, a una exposicin de pintura, a una conferencia-coloquio positiva y divertida consiguen desconectar todo su ser de las preocupaciones, los temores, las responsabilidades, las prisas, las exigencias, las tensiones y activan el sistema nervioso parasimptico,

gran equilibrador y creador de sosiego y de paz. A esto hay que aadir que, por empata, quien contempla un bello cuadro o escucha una extraordinaria composicin musical o admira una construccin arquitectnica monumental y bellsima, se siente creador junto con el autor, con el artista, y esto le lleva, como ser humano integrado en el todo, a sentir como propio lo creado por otro ser humano. En el interior de su mente se produce el siguiente razonamiento silencioso: Toda esta maravilla es obra de hombres extraordinarios, pero hombres y mujeres como yo; verdaderamente tenemos motivos para sentirnos motivados y orgullosos por pertenecer a la especie humana. Los humanos nos sentimos vivos y celebramos la vida en la medida en que nos sentimos creadores y descubridores de nuevas cosas y experimentamos nuevas sensaciones. Nuestro cerebro fue diseado para ser creativo, para resolver problemas e innovar. Cuando contemplamos las creaciones propias o de los dems, activamos la dopamina y la serotonina en nuestro cerebro y nos sentimos ms seguros, importantes y felices. Nos motiva nuestra propia creatividad y capacidad para resolver conictos, pero tambin nos tonica y euforiza contemplar y admirar las maravillas del arte y de la ciencia que el hombre ha creado o ha descubierto por s mismo. Cualquier persona que se sienta activa y creativa o que disfrute admirando y contemplando la produccin y creacin artstica o cientca de los dems, se est proporcionando a s misma un gran gozo, relajante, tonicante y motivador. En consecuencia, el estudio que han llevado a cabo los investigadores noruegos est respaldado adems por la experiencia cotidiana de los profesionales de la psicologa y de la psiquiatra. Los pacientes que saben desconectar de sus tensiones, estrs y agobios, centrando sus mentes en experiencias nuevas y tan relajantes como las que hemos apuntado, que guardan una relacin directa con todo tipo de actividades culturales, se sienten verdaderamente aliviados y reconfortados fsica y mentalmente. El ocio que ayuda a desconectar de las tensiones y preocupaciones cotidianas y del estrs es seguramente el mejor y ms provechoso negocio para los humanos del siglo XXI. La razn es que de manera directa o indirecta activan el optimismo vital que reporta los siguientes benecios:

1. Mejor salud fsica y psquica porque a mayor optimismo vital, se da un estilo de vida ms saludable y agradable. Ser optimista importa tanto como tener buenos genes y hbitos saludables. 2. Quien se engancha al optimismo y a las actitudes positivas vive 7,6 aos ms que el pesimista. 3. Se potencia ms el sistema inmunolgico siendo positivo y entusiasta, con lo cual estamos poniendo una poderosa barrera a la mayora de las enfermedades. 4. Se logra ms fortaleza y habilidades ante la adversidad e incremento de los recursos psicolgicos que nos protegen frente a la depresin. 5. Al igual que la risa, la sonrisa y el sentido del humor, una mente relajada, sosegada y optimista activa el sistema de recompensas mesolmbico dopaminrgico que est asociado con diversos placeres hednicos. How did you discover Emma Bovary? I loved reading as a child, as does Emma Bovary. I found this book at home and noticed how my heart raced when I read it; I discovered a sensual world. When I read it again, I was feeling very alone and Emma Bovary helped me change.

de Madrid, premio nacional de Diseo, y acadmico de Bellas Artes, Corazn muestra en la exposicin Canciones del alma de San Juan de la Cruz su faceta de pintor. He encontrado inspiracin para mis cuadros en la poesa. San Juan siempre me ha impresionado, pero, con el p ,p tiempo y la experiencia, he exper

comprendido mejor la complejidad de la relacin amorosa, la plenitud de la unin y hasta la violencia ertica presente en los versos del santo carmelita. La sensibilidad de Corazn le llev a identicar el argumento del poema con el concepto de trnsito, determinante en la mstica de San Juan, donde el alma, despojada de otros anhelos, sale al encuentro de Dios. Esta idea, expresada en el verso sal sin ser notada, estando ya mi casa sosegada, me llev a imaginar una puerta como punto de partida y llegada en el viaje hasta el amor pleno. Por eso constru una secuencia simblica de ocho umbrales que representan otras tantas estrofas de este perturbador poema, explica Corazn. As, el artista elabor ocho composiciones sobre papel de gran formato 210 x 100 cm, acompaadas de 20 dibujos con los recursos visuales que conforman su iconografa: cuchillos, casas, sillas, hojas, cuerpos humanos, llamas, escaleras A estas imgenes, el pintor ha agregado palabras, frases y versos. Tras la era internet, qu garantiza la multiculturalidad? Cuando el nmero de opciones culturales accesibles es mayor, la multiculturalidad persiste. Por ejemplo, si tenemos pocas lenguas en una sociedad, llegaremos a un estado global. Contar con ms lenguas vivas permite la pervivencia de la multiculturalidad. En el mundo actual, que las personas nos comuniquemos ms no implica necesariamente una globalizacin, sino una coevolucin. Cuando las personas interaccionamos nos hacemos ms parecidos. Pero nunca llegamos al estado homogneo, a la uniformidad total, porque los fenmenos de convergencia local son compatibles con una polarizacin global, es decir, con una multiculturalidad. Entonces, la globalizacin no existe, es una patraa que se han inventado? Desde la Fsica lo que se puede armar es que los fenmenos de convergencia local no implican que vayamos a una globalizacin cultural. Lo que garantiza la multiculturalidad es la capacidad para redenir la red social, que no es ja. Mientras vamos cambiando nuestros propios rasgos culturales, vamos redeniendo nuestra red social de interacciones. Es el viejo dicho de que las circunstancias hacen a los hombres, pero los hombres tambin hacen las circunstancias. Los hombres denimos nuestra red pero, al mismo tiempo, esta nos redene a nosotros segn nos vayan nuestras relaciones sociales.

Cundo ha sido la ltima vez que ha ido al cine? Hace ya algn tiempo. Mi hijo tiene dos aos y requiere toda mi atencin. Eso s, siempre voy al cine con la actitud de un adolescente. Quiero disfrutar de la historia que me cuentan y comer palomitas. Y si su hijo le dice que quiere ser director de cine? Le animar, adems de darle los mejores consejos para que desarrolle su trabajo. No s quin se lo ha enseado, pero me explica cuentos poblados de monstruos buenos. Es muy imaginativo. Para su trabajo los ojos resultan fundamentales. Qu ocurrira si se quedara ciego? Ante todo, sobrevivir al golpe adaptndome a la nueva situacin. Despus, escribira novelas. Qu nuevo proyecto ronda por su cabeza? Preparo la ltima parte de la saga REC. La pelcula se llamar REC Apocalipsis. Pero no puedo adelantar nada del argumento, lo estamos preparando.

Cmo ha sido el rodaje de Mientras duermes? Divertido pero duro a la vez porque todo el equipo se ha implicado mucho desde el punto de vista emocional. Aqu no aparecern muertos vivientes. Y de qu trata? Csar, personaje interpretado por Luis Tosar, es el portero de un edicio y se dedica a hacerle la vida imposible a todo el vecindario, especialmente a la chica del 5B, que encarna Marta Etura. Qu historias no le dejan dormir? Pues las que tienen que ver con el sufrimiento ajeno. Cuando veo las noticias de la televisin, me pregunto cmo puede existir tanto dolor en el mundo. El horror verdadero carece del glamour de los zombis.

building and spends his time making life impossible for the people who live there, especially the girl in 5B played by Marta Etura.

What stories keep you awake at night? The ones about other people suffering. When I see the news on television, I often ask myself how there can be so much pain in the world. True horror lacks the glamour of zombies. When was the last time you went to the cinema? Quite a while ago now. My son is two years old and needs all my attention. That said, I always go to the cinema with the attitude of a teenager. I want to enjoy the story Im going to see and munch popcorn. What if your son says he wants to be a lm director? Ill encourage him and give him all the best advice on developing his work. I dont know where he got it from but he tells me stories about good monsters. Hes very imaginative. Your sight is extremely important for your work. What would happen if you went blind? First of all, try and survive by adapting to my new situation. After that, Id write novels. What new project are you brewing? Im preparing the final part in the REC saga. The lm will be called REC Apocalpsis but I cant tell you anything about the story. We e st wo g o t. e sienta en las escaleras del patio del Palacio de Los Serrano en vila para atender a los jvenes que han acudido hasta all a pintar, a aprender, a escucharle. Como cada ao, Antonio Lpez Garca (Tomelloso, Ciudad Real, 1936) dirige la ctedra Francisco de Goya que organizan la Obra Social de Caja de vila y la Universidad Complutense de Madrid. El artista contempla el cuadro de una de las estudiantes que le rodean y no se anda con paos calientes: Este retrato es muy malo, porque no has tenido delante a esta persona, habrs visto

una foto o te la has imaginado, pero no la has visto en realidad. La realidad es para Antonio Lpez el nico punto de partida de una obra artstica que, sin embargo, no puede calicarse de realista o fotogrca. S de verdadera, de viva. El pintor ha sobrevivido a la gran retrospectiva que le ha dedicado el Museo Thyssen de Madrid y que el 10 de octubre viajar al Museo de Bellas Artes de Bilbao. Ha visto reunidas 129 piezas, entre pinturas, esculturas, dibujos y bocetos, de las que no quiere ni puede desengancharse: Las cosas no se termi-

pas con La terraza de Lucio, que comenc a pintar en 1962 y que tuve que seguir pintando hasta 1990. Si la colaboracin con la realidad se interrumpe, el cuadro se interrumpe. Acabar una pintura no es como terminar una mesa, un cocido o un zapato. En el arte, los lmites son imprecisos: depende de cmo te lleves con el cuadro, del entusiasmo que te produzca, y, sobre todo, del mundo real. Para captar cierta luz, tengo que sorprenderla en el momento preciso. Por eso no soy dueo del tiempo en el que trabajo. ha puesto en contacto con las mejores personas, me ha dado los medios para vivir. Siento amor por mi trabajo, como lo siento por algunas personas y lugares.

El paisaje urbano es el protagonista de muchas de sus obras. El escenario donde se mueve el hombre, ya sean las calles de una ciudad o el interior de una casa, es para m muy interesante y misterioso. La cocina, el bao, el dormitorio, la Gran Va, algunos fragmentos de la periferia de Madrid, son para m temas recurrentes. Es ese paisaje que se reeja en cuadros como Madrid desde la torre de bomberos de Vallecas o en Afueras de Madrid desde el cerro de Almodvar. Me interesa mucho esa parte de la gran ciudad que se funde con el campo, quiz por su condicin de lmite habitado, pero inhabitable. Es un tema al que vuelvo una y otra vez. Usted ha dicho recientemente que ha renacido su inters por la gura humana. Es cierto, he regresado a la gura humana y deseo centrarme en ella, volver a lo humano como esencia. No solo al simple retrato, tambin a lo que la persona puede hacer: lavarse, afeitarse, comer La escultura me permite retomar con libertad esa figura, porque puedo representarla desde todas las perspectivas, no tengo que elegir una, como ocurre con la pintura. Quiz este inters renacido por lo humano se deba a que ahora me llevo mejor con la gente que antes.

La luz y el tiempo son dos componentes esenciales de sus cuadros. La luz desvela el mundo y rebasa los lmites de mi sensibilidad. Est por encima de m. La luz y el color construyen la pintura como el ritmo del sonido y el silencio construyen la msica. En cuanto al tiempo, para m es un misterio inexplicable, una energa emocional que nos enlaza con el cosmos. El tiempo se dilata, no tiene lmites, pasa y no se acaba. Esa percepcin que tiene usted del tiempo le convierte en un pintor paciente? Soy paciente porque la paciencia es el inters, es el hechizo. Todos somos pacientes con las personas y las cosas que nos importan. Qu es lo que le importa a usted? Mi trabajo y algunas personas. Al perder con los aos la sensualidad, que estaba muy presente en otra edad, veo muy claro lo que queda. El trabajo permanece intacto como un espacio que ha enriquecido mi vida, me ha hecho mejor, me

Lugares como su pueblo, Tomelloso, o la Gran Va de Madrid. Mi pueblo est muy ligado a mi vida, me importa mucho y me irrita a veces. Tomelloso es como mi familia: nos une un vnculo muy poderoso, aunque hay otros lugares que me parecen mejores. Me parecen mejores, pero me dan igual. Del mismo modo, cuando pienso en la Gran Va de forma racional, llego a la conclusin de que tampoco es para tanto. Pero tiene misterio. Es un lugar inhspito y onrico. Representa una aspiracin, algo que va ms all de lo que es necesario para el hombre, como los sueos.

A esa hora se pone en marcha para conducir el magazine Espejo Pblico, en Antena 3. Para desconectar de la rabiosa actualidad y la rutina, Susanna Griso se decanta por los viajes, y cuanto ms lejos y diferente a Espaa, mejor. El museo de Figueres (Girona) es impresionante, nico. No me extraa que sea el ms visitado de Espaa despus de El Prado de Madrid. Yo suelo estar mucho por esa zona de la Costa Brava, as que siempre que puedo, mejor en temporada baja, aprovecho para visitar el mundo daliniano que encierra. Hay que evitar los das festivos y el verano porque las colas son interminables, se junta medio Japn frente a la fachada del huevo.

difcult ld have ave t is difcult to believe that a child could have a new toy lorry in his hands and not know how to play with it because he had never seen one before. But that is something I have witnessed and I still become emotional when I remember the expression of disbelief and overwhelming happiness that came across his face when someone beside me bent down next to him and taught him to load it with stones and soil from the ground and then transport and unload it all. It was like a small miracle immediately imitated by a dozen other kids. It happened last spring in Morocco. The One Toy, One Dream campaign, the one based on the solidarity pen campaign had just begun to ship over 500,000 toys obtained last year to Asia, Africa and Latin America. I was among a small group of co-operators who had the chance to be present during the delivery in our North African neighbour and we were able to verify that a pen can truly do wonders. Son lo que Kevin Roberts, consejero delegado de Saatchi & Saatchi, denomina lovemarks, marcas amadas, como Coca-Cola, El Corte Ingls o Apple. Por qu ellas, y no otras, han llegado al corazn de los consumidores? Cul es el secreto? En primer lugar, un gran producto, diferente, nico, explica Cristian Saracco, director de Allegro234, agencia de marketing estratgico y branding. Estas muestras gastronmicas se es. dividen en tres temticas diferentes. aa Las denominadas Productos de Espaa estarn dedicadas a los productos audes tctonos clasicados por comunidades autnomas y temporada. Segn el producto elegido, se realizarn mens, una cata o habr un plato incluido en la carta. As, en los paradores de Andaluca se destacarn productos como el jamn de Huelva y la or de sal de Cabo de Gata; en los de Aragn, el ternasco y el melocotn de Calanda; en los de Canarias, quesos como el majorero y el palmero, etc. Otra de las temticas ser la historia y cultura de Espaa. En estas muestras, se vincular la historia del entorno del parador y de su propio edicio con hechos relevantes. As, habr mens dedicados a la cocina sefard, a la mudjar y a la del Camino de Santiago y otros llevarn por ttulo Cristbal Coln, la cocina del descubrimiento; La alacena picaresca en el Siglo de Oro; Viandas y otros guisos de la cocina del Quijote Por ltimo, habr un grupo de mens que se centrarn en las costumbres y tradiciones espaolas. En l tendrn cabida las recetas locales, de la cocina autctona, y las que se preparan para la celebracin de festividades. Los equipos de cocina de los 93 paradores prepararn guisos tradicionales de bacalao, cocidos, guisos de pescadores, platos propios de la cocina de Cuaresma, de la matanza, de la cocina castiza, etc.

Dentro de esta iniciativa tambin habr presentaciones de productos en colaboracin con consejos reguladores y algunos de los mens propuestos sern itinerantes y recorrern varios establecimientos de la Red. Adems, cada parador editar para cada una de las muestras un recetario virtual que se publicar en la web de Paradores (www.parador.es) para que los clientes tambin puedan seguir disfrutando de estas recetas y sabores en las cocinas de sus casas.

The Parador hotels in Andalusia will feature ham from Huelva and sea salt from Cabo de Gata; those in Aragon will feature suckling lamb and peaches from Calanda; those in the Canary Islands will feature such cheeses as the majorero and palmero, etc. The second category will be centred around the history and culture of Spain. These will focus on the history of the area around the hotel and the building itself. There will be menus dedicated to Sephardic cuisine, Mudejar cuisine and that found along the Pilgrims Route to Santiago, as well as the food associated with Christopher Columbus and the discovery of America, the alacena picaresca of the Golden Age, the broths and strews of Quixote cuisine, etc. Finally, there will be a series of menus that focus on Spanish customs and traditions featuring local recipes, typical cuisine and the dishes prepared for popular festivities. The kitchen teams of the 93 Parador hotels will prepare traditional cod stews, broths, shermans stews, dishes from the cuisine during Lent, the slaughtering season, etc. This initiative will also offer product presentations in collaboration with regulatory councils and some of the proposed menus will involve a journey to several different Parador hotels. Furthermore, each hotel will produce a virtual recipe book for each event that will be published on the Paradores website (www.parador.es) so that guests can continue to enjoy the wonderful tastes and flavours in their own homes.

Extraa palabra que ha dado lugar a unos locales llamados cocteleras y que tambin designa a una convocatoria social en la que se sirven bebidas. La bsqueda de sus orgenes ha remitido a mltiples historias, algunas ms razonables y otras basadas ms bien en la vieja expresin italiana de se non vero, ben trovato (si no es cierto, es bien apreciado). Hoy, el cctel est ms de moda que nunca, tanto los tradicionales (como el dry martini, el bloody mary, el mojito original o el gin tonic) como otros muchos ms vanguardistas; detrs de los que puede estar la mano de uno de los grandes cocineros de xito. Porque las nuevas tecnologas han llegado no solo a la alta cocina sino a las barras de bares y cocteleras, ampliando las posibilidades para los acionados. Nadie permanece ajeno a este fenmeno, por lo que quiero felicitar tambin a Paradores, empresa siempre atenta a la evolucin de la gastronoma, que lanza sus ccteles ligeros y ecolgicos (un total de ocho, con alcohol y sin alcohol). Con quin ha compartido momentos inolvidables sentado a una mesa? La mejor cena que he hecho en mi vida fue en El Bulli con un amigo de toda la vida, compaero de correras gastronmicas y teatrales, Borja Sitjar. Pero he compartido muchas mesas y momentos inolvidables, como haber comido en la cocina de Martn Berasategui y habernos redo hasta la extenuacin. Es comparable el placer de cocinar y el de actuar? S, actuar tiene que provenir de una necesidad de conmover y emocionar al espectador. No se diferencia en nada de la cocina. Cuando uno cocina para uno solo, pretende enamorarse a uno mismo, y cuando cocina para otros, pretende gustarles a ellos.

Esa calidad es reconocida cada ao por el Ministerio de Medio Ambiente y Medio Rural y Marino, que concede los premios Alimentos de Espaa a los mejores aceites de oliva virgen extra. En la campaa 2010/2011, el aceite de oliva virgen extra ganador ha sido el presentado por Manuel Montes Marn, de Priego de Crdoba, que ha obtenido adems el galardn al mejor aceite de oliva virgen extra en la modalidad de frutados verdes amargos.

y a long margin, Spain is the largest producer of olive oil in the world. The product symbolises the Mediterranean diet and is praised for its gastronomical and healthy characteristics. Extra virgin olive oil is an essential ingredient in the kitchen: its raw state brings out the full aroma and avour but it is also the perfect basis for numerous dressings; its stability means it is perfect for oven roasting; and when frying, it forms a ne but at the same time consistent layer around the food that stops it from absorbing the oil. These culinary properties are accompanied by many health benets. Several studies show that its consumption can protect against cardiovascular disease and

help reduce the effects of obesity, diabetes and high blood pressure. Spain not only leads the world in terms of production but also in terms of quality. The diverse variety and ecological range of olives grown in Spain is matched only by the numerous cultivation and harvesting techniques that have been applied by farmers for years thanks to the incorporation of more advanced technologies. This quality is recognised every year by the Ministry of Environmental Rural and Marine Affairs when it presents its Foods from Spain awards for the best extra virgin olive oils. From the 2010/2011 season, the winning extra virgin olive oil was presented by Manuel Montes Marn, from Priego de Crdoba, who also won the award for

the best extra virgin olive oil in the bitter green fruity oils category. Other winners included El Labrador (Fuente de Piedra, Malaga) in the sweet green fruity oils category; La Canaleja (Mrida, Badajoz) in the mature fruity oils category; and Moli dels Torms (Els Torms, Lleida) in the eco-friendly production category. All these oils were available to try in Parador restaurants in July. Throughout the rest of the year, our restaurants offer the most representative dishes from Spanish gastronomy prepared using the best extra virgin olive oil from each region.

NUEVAS APERTURAS

Se inauguran los paradores de Cceres y Villafranca del Bierzo

l renovado Parador de Cceres fue inaugurado ocialmente el pasado mes de julio por el presidente de la Junta de Extremadura, Jos Antonio Monago; el ministro de Industria, Turismo y Comercio, Miguel Sebastin; la alcaldesa de Cceres, Elena Nevado, y el presidente de Paradores, Miguel Martnez. La reforma ha costado 5,48 millones de euros y se ha centrado en la redistribucin del interior del edicio, mejorando su explotacin ha pasado de 33 a 39 habitaciones y su accesibilidad. Adems, se ha apostado por el uso de energas renovables, sistemas de ahorro energtico y reciclado de residuos. Asimismo se ha inaugurado en septiembre el Parador de Villafranca del Bierzo que, tras una reforma integral que ha supuesto una inversin de 6,9 millones de euros, ha conseguido su cuarta estrella. El Parador cuenta ahora con 51 habitaciones (12 ms que antes), ms capacidad para eventos, una piscina exterior y otra climatizada.

Parador de Caceres and Parador de Villafranca del Bierzo re-open their doors

he renovated Parador de Caceres was officially re-opened in July by the President of the Regional Government of Extremadura, Jos Antonio Monago, the Minister for Industry, Tourism and Trade, Miguel Sebastin, the Mayor of Caceres, Elena Nevado, and the CEO of Paradores, Miguel Martnez. The renovation work has cost 5.48 million euros and was focused on redesigning the buildings interior to improve usage (from 33 to 39 guest rooms) and

accessibility. Furthermore, a commitment has been made to renewable energies, energy saving systems and waste recycling. The Parador de Villafranca del Bierzo was re-opened in September following a complete overhaul that required an investment of 6.9 million euros, converting it to a 4-star establishment. The hotel now has 51 guest rooms (12 more than before), more capacity for events, an outdoor pool and another heated pool.

SABOREA ESPAA, CON PARADORES

El director general de Comercializacin de Paradores, Carlos Abella, y el presidente de la Asociacin Saborea Espaa, Pedro Subijana, han rmado un convenio de colaboracin por el que 12 de los 93 paradores sern destacados por Saborea Espaa como restaurantes emblemticos debido a su oferta gastronmica y su vinculacin con la cocina y los productos de calidad.

a cena benca por Japn celebrada el 2 de junio en el Parador de Alcal de Henares y organizada por Paradores y el Grupo Ciudades Patrimonio fue un autntico xito. Ms de cien personas expresaron su solidaridad con los damnicados del terremoto que sacudi el pas nipn el 11 de marzo de 2011 acudiendo a la cena. Cada uno de los comensales contribuy a la causa con los 100 euros del cubierto y el total recaudado ascendi a 13.220 euros. El evento cont con la presencia del presidente de Paradores, Miguel Martnez, y del de Ciudades Patrimonio, Fernando Clavijo, y del embajador de Japn en Espaa, Fumiaki Takahashi. Tambin colaboraron con la iniciativa la artista Luca Domingun y el actor Ramn Langa.

he charity dinner for Japan held on 2 June at the Parador de Alcal de Henares and organised by Paradores and the Ciudades Patrimonio Group was a real success. More than one hundred people expressed their solidarity with the victims of the earthquake that devastated Japan on 11 March 2011 by attending the dinner. Each one of the diners contributed 100 euros to the cause and the total amounted raised came to 13,220 euros. The event was attended by the CEO of Paradores, Miguel Martnez, the Chairman of Ciudades Patrimonio, Fernando Clavijo, and the Japanese Ambassador to Spain, Fumiaki Takahashi. The artist Luca Domingun and the actor Ramn Langa also took part in the event.

n el ao 797 reinaba en Espaa el emir de Crdoba Al-Hakam I. La ciudad de Toledo, bajo su dominio, presuma de tener una poblacin rebelde y el emir, para agradarles, mand un nuevo gobernador, Jusuf-ben Amru. Cuando este se gan la conanza del pueblo, puso en marcha la particular venganza del emir. Invit a cenar a su palacio a los nobles toledanos y, cuando iban llegando, apenas les daba tiempo a ver que lo que all les haban preparado no era tal cena. Despus de atravesar la puerta, eran degollados y arrojados a un foso. Aquella fue, sin duda, una noche convulsa, de ah el signicado popular de noche toledana. Pero ms all de historias y leyendas, la noche es, quizs, el 02 mejor momento para contemplar esta ciudad desde la terraza del restaurante del Parador de Toledo. Es entonces cuando despliega su magia, sus palacios e iglesias muestran su mejor perl, las callejuelas se insinan en la distancia y la mirada se siente libre para inventar cada noche una ciudad distinta.

n the year 797, Spain was ruled by the emir of Cordoba, Al-Hakam I, and the city of Toledo was home to a rebellious population. The emir sent a new governor to appease the people, Jusuf-ben Amru. Once he had won the condence of his subjects, he began to implement the unique vengeance of the emir. He invited the nobles of Toledo to dine at his palace but, as they arrived, they hardly even had time to realise that his plans for them did not include a pleasant evening meal. As each of them came through the gate, their throats were slit and their bodies thrown into a pit. Hence the signicance behind the Spanish term noche toledana or sleepless night. However, stories and legend aside, night-time is the best time to observe this city from the terrace of the restaurant at the Parador de Toledo. When darkness falls, the city releases its magic, its palaces and churches reveal their best prole, alleyways can be glimpsed in the distance and ones imagination feels free to invent a different city every night.
