EXECUTIVE SUMMERY Importance of study

In developing countries agriculture is the main stay of the economy. As such, it should be no surprise that agricultural industries and related activities can account for a considerable proportion of their output of the various types of activities that can be termed as agriculturally based, fruit processing are among the most important. Both established and planned fruit processing projects aim at solving a very clearly identified development problem. This is that due to insufficient demand, weak infrastructure, poor transportation and perishable nature of the crops, the grower sustains substantial losses. Phule Drinks is the set of methods and techniques used to transform raw ingredients into food or to transform food into other forms for consumption by humans either in the home. Phule Drinks typically takes clean, harvested crops products and uses these to produce attractive, marketable and often long shelf-life food products. During the post-harvest glut, the loss is considerable and often some of the produce has to be fed to animals or allowed to rot. Near about 30- 40 percent post harvest losses occurs due to this 570000 crore rupees loss Even established fruit and vegetable processing are developed on research activivities in MPKV, Rahuri. This is one of the extension activities to encouraging the farmers to enter post harvest technology this is named as Phule Drinks. Maharashtra state government provides 100 per cent subsidy for Rural Employment Programmers due to this more land cultivated under horticultural crops such as pomegranate , Ber, Aonla, Tamarind and Mango these crops perishable in nature and having less shelf life. Phule Drinks is one of the best fruit juice prepared from different fruit like mango, Aonla, Pomegranate etc.which having different ingredient such as sodium benzoate, Sugar and sodium meta bisulphide. Phule Drinks Research Centre at Rahuri in Maharashtra is focused for fruit crop processing to minimize post harvest losses and its product value.

Objectives
1. To study the research and development in post harvest technology adopted by Phule Drinks. 2. To study production and operation management of Phule drinks in MPKV, Rahuri.
