Almond Cookies

Ingredients: o o o o o o
9 egg whites 3 egg yolks 2 sticks butter (room temperature) 2 cups sugar 4 cups sliced almonds 1 1/3 cups all purpose flour Makes 72 cookies

Preparation:
1. 2. 3. In a large bowl, beat the egg white with high-speed electric mixer until stiff (about 5 min.) Add egg yolk, continue to beat for another 3 minutes. In another large bowl, beat the butter with electric mixer first, add sugar, continue to beat until it's even (about 6 minutes) 4. Combine 2 bowls. Beat for another 6 minutes. 5. Add flour, beat for 5 minutes. 6. Fold in sliced almonds. 7. Lay the parchment paper on the cookie sheet. Use table spoon to scoop the dough onto the foil. Spread the dough with butter knife or spatula into 2 inch diameter size and make it evenly thin. About 9 cookies per sheet depending on the size. 8. Heat the oven to 300 degrees. 9. Bake 2 trays each time. Set timer to 8 minutes. When cookie edge turns lightly brown in the bottom rack, switch the top and bottom rack. 10. When the entire cookie turns light brown, take it out to the wire rack to cool.
