Great for a lazy weekend meal. The tuna is the hero but the preserved lemon dressing makes this delicious.

T na Ske e 2 tablespoons Olive Oil teaspoon sea salt freshly ground Black pepper 2 pieces (approx 2cm thick) tuna steaks cut into 4 pieces on the diagonal 4 Bay leaves P e e ed Lemon D e ing

Me hod
T na Ske e 1. 2. 3. 4. Soak 2 wooden skewers in water for 1 hour. Assemble by placing two pieces of tuna and a bay leaf on each skewer. Coat tuna with olive oil, sea salt and pepper. Heat a large non-stick frying pan over high heat and cook each tuna skewer for 2 minutes. 5. Turn and cook for another 2 minutes. 6. Remove from heat and place a skewer on top of each plate and serve with preserved lemon dressing. P e e ed Lemon D e ing

3 tablespoons preserved lemon washed and finely diced 2 tablespoons Extra Virgin Olive Oil 1 tablespoon fresh oregano leaves roughly chopped

1. Sprinkle the preserved lemon over the tuna skewers and drizzle with olive oil. 2. Top with oregano to serve. No Rating
