Chinese Recipe : Braised Sea Cucumber

Serves 6

Ingredients:

• 2 tbsp oil
• 3 stalks spring onions
• 3 slices ginger
• 2 tbsp rice wine, divided
• 2 cups chicken stock
• 1 lb. sea cucumber
• 4 Chinese dried mushrooms
• 12 bamboo shoots
• 2 tbsp rice wine
• 2 tbsp cornstarch blended with 2 tbsp cold water

Sauce mix:

• 1/2 tbsp Oyster Sauce


• 1 tbsp Soy Sauce
• 1 tsp Sesame Oil
• 1 tsp sugar

Directions:

1. Sauté ginger and spring onions in hot oil.


2. Add 1 tbsp of wine, chicken stock and sea cucumbers. Cook at medium heat for 5 minutes.
3. Add Chinese mushrooms, bamboo shoots and sauce mix.
4. Cover and braise for 10 minutes until the sauce is drying to half
5. Add cornstarch mix, the balance of the wine and cook until thickened.
