Country Style Lasagna

2 cans (14.5 oz. each) Del Monte Diced Tomatoes with Basil, Garlic and Oregano-No Salt Added 9 2-inch wide lasagna noodles milk 2 Tbsp. butter or margarine 3 Tbsp. flour 1 tsp. basil, crushed 1 cup diced lean cooked ham 2 cups shredded low-fat mozzarella cheese (Optional) parmesan cheese (Optional) green onions (Optional) salt (Optional) pepper COOKING DIRECTIONS

1. Cook pasta according to package directions; rinse and drain. 2. Drain tomatoes, reserving liquid; pour liquid into measuring cup. Add milk to measure 2 cups. 3. Melt butter in saucepan; stir in flour and basil. Cook, stirring constantly, over medium heat for 3 minutes. Stir in reserved liquid; cook, stirring constantly, until thickened. Season to taste with salt and pepper, if desired. Stir in tomatoes. 4. Spread thin layer of sauce on bottom of 8x11-inch or 2-quart baking dish. Top with 1/3 each of noodles, sauce, ham, then cheese; repeat twice. 5. Bake uncovered at 375F for 25 minutes. Garnish with grated Parmesan cheese or sliced green onions, if desired.

1 can (13.5 oz.) Del Monte Chopped Spinach, drained 1/2 can (25.5 oz.) Del Monte Traditional Spaghetti Sauce 8 dried lasagna noodles 1-1/2 cups (6 oz.) shredded reduced fat mozzarella cheese 1 cup low-fat ricotta cheese 1 tsp. fat-free dried italian seasoning COOKING DIRECTIONS

1. Cook pasta according to package directions; drain. 2. Combine spinach, 1 cup of mozzarella cheese, ricotta cheese and seasoning. Spread on one side of each lasagna noodle. Roll up and place in 2-quart square baking dish. Pour spaghetti sauce over rolls. 3. Bake, covered, at 350F, 35 minutes or until heated through. Sprinkle with remaining mozzarella cheese.

(15 oz.) low-fat ricotta cheese 1/3 cup grated low-sodium Parmesan cheese 1 egg, beaten 2 cups shredded low-fat mozzarella cheese (Optional) additional Parmesan cheese (Optional) fresh basil COOKING DIRECTIONS

1. Cook pasta according to package directions; drain. 2. Cook onion, garlic and rosemary in oil, 3 minutes. Add undrained tomatoes, peas, green beans and artichokes. Cook 5 minutes. 3. Combine ricotta cheese, Parmesan cheese and egg. 4. Layer 3 noodles, 1/3 ricotta mixture, 1/3 tomato-vegetable mixture and 1/3 mozzarella cheese in oiled (9x13-inch) baking dish. Repeat twice. Bake at 350F, 30 to 35 minutes. Serve with additional cheese and garnish with fresh basil, if desired.
