Almost Gluten-Free Pizza

INGREDIENTS

Bob s Red Mill Gluten Free Pizza Crust Whole Grain Mix 1 cups warm water 2 eggs * 2 tlbs olive oil 1 cup spinach leaves cup sliced mushrooms green pepper yellow pepper red pepper One bunch green onions

1 large tomato 8 oz can of tomato sauce 2.25 oz can of sliced black olives Dried basil leaves Dried leaf oregano Dried parsley flakes Mozzarella cheese, shredded * Garlic (optional)

* DIRECTIONS

1. Follow the directions according to the pizza crust recipe. (Pizza crust mix, water, eggs, olive oil). Leave the dough in bowl, splitting it in half (if you want two pizzas), cover with saran wrap, and set aside to let it rise. 2. While the dough is doing its thing(!), wash and blot dry all veggies. 3. Chop the green, yellow, and red peppers as well as the green onions. You will place these and all other ingredients in separate bowls. 4. Slice tomato like you would for a sandwich. Once sliced, cut into quarters. Place onto a small plate, covered with a paper towel to absorb the liquid. 5. Place dough onto a pizza pan or a cookie sheet, sprayed with Pam. Hint: use plastic gloves and spray them with Pam trust me. 6. Once the dough is on the pan/sheet, cook in a 425 degree oven for 7 to 9 minutes WITHOUT toppings. 7. Once done, pour the tomato sauce onto the baked crust(s), using only what is necessary. 8. Sprinkle on the basil, oregano, parsley flakes, and garlic (optional I use fresh minced that comes in a plastic container from Sam s). 9. Place veggies however creative you feel all over your pizza.

10. Sprinkle lightly with Mozzarella cheese. 11. Bake for 15-18 minutes. Yields two 12-inch or one 16-inch pizza. Calories? Most will come from the pizza crust mix. It says 1 slice (1/4 of a 16 pizza) is 250. With cheese, about 10 more. And seriously, veggies? Pile em up!!

For true vegan-ites: y Substitute the eggs with 2 tablespoons Flaxseed Meal + 6 tablespoons water; let stand one minute then add to the pizza crust mix as you would the eggs. y Skip the cheese.
