Introduction Fruit and vegetables contain high amount of phytochemical- many health benefits.

. Epidemiological studies shown: regular consumption of fruit and vegetable is strongly associated with reduced risk of chronic diseases. Example: fruit and vegetable are normally consumed by human as fresh / juice or smoothies etc.. Objective To assess the level of phytochemicals present in the selected fruit and vegetables and its impact on the level phytochemical during processing of smoothies. To assess the level of phytochemical in smoothies with corresponding human exposure assessment Method Data collection based scientific literature. A model will be developed using Monte Carlo Simulation technique to assess various impact on the level of phytochemical during smoothie processing and subsequent human exposure assessment. Various phytochemical content in fruit and vegetables are collated from different scientific literature to formulate smoothie combinations. Result Based on the preliminary model, the calculated mean total phenolics and flavonoids for 2 combinations for 200 ml glass of smoothies (Safe food, 2009) are shown in Table below. Conclusion This preliminary model indicates that human consumption of Smoothie combination 1 shown to contain high content of phytochemical compared to combination 2. Future work The model will be further developed with different combinations of fruit and vegetables & its phytochemical content. The model will be simulated using Monte Carlo simulation technique to capture the uncertainty and variability in the level of phytochemical in selected fruit and vegetable
