Scrambled Eggs with Garlic, Basil, and Gruyre (Cheese)

Yields: 2 Servings Ingredients 2 teaspoons olive oil 2 garlic cloves, smashed 4 large eggs 1 tablespoons light cream 2 tablespoons finely chopped fresh basil 2 tablespoons grated Gruyre (Cheese) Method 1. Heat oil in a large, heavy, skillet over low heat. Add the garlic and saut until golden, but dont let it turn brown or burn. 2. Beat together the eggs, cream, 2 tablespoons water, basil, and cheese in a large bowl. 3. Pour the egg mixture into the skillet over the garlic. Scramble lightly and cook until fluffy and soft but not runny. Divide between 2 plates and serve.
