Line a roasting pan with foil and top with parchment. Preheat a gas grill to 400F. (Or, you can skip the roasting pan and the grill and just do this in a pan on the stovetop. Heat to medium high and cover the bottom of the pan with a little olive oil.) Mix all the spices together well. Sprinkle over the catfish filets. Drizzle with olive oil (if youre cooking it on the grill). Cook until the fish is done through about 3 minutes per side, depending on how large your filets are.
