Changing it up: Basketball to baking
By ROBERT LINNEHAN
The Haddonfield Sun
Theres not a lot of difference
between baking and basketball,
its just a lot harder to drag a mix-
ing bowl up and down the court.
Brian Zoubek, a member of
Duke Universitys 2010 national
championship team, is taking the
next step in his life and following
one of his passions. Zoubek, of
course, played an intricate part of
Dukes 2010 title run, leading the
Blue Devils to their first champi-
onship since 2001.
But instead of rebounding and
playing tough defense, Zoubek
will be taking a different turn.
Hell be baking. More specifi-
cally, baking cream puffs.
The seven-foot chef and aspir-
ing businessman will be opening
up his first venture, Dream Puffz
(note the Z for Zoubek) on Sat-
urday, July 21, with a grand open-
ing ceremony scheduled for the
morning.
The niche bakery, located at 605
Haddon Avenue, will specialize in
nothing but the small pastries,
selling them by the pound to hun-
gry visitors and hopefully mov-
ing onto larger catered affairs,
Zoubek said from the refurbished
kitchen at his new bakery.
After graduating from Haddon-
field Memorial High School and
ROBERT LINNEHAN/The Haddonfield Sun
Brian Zoubek, right, hangs out with his pastry chef, Joseph Vella, who will handle most of the baking duties for their new venture, Dream
Puffz. Zoubek, a member of the 2010 Duke University national championship basketball team, is taking the next step of his life and
venturing into the pastry game. Dream Puffz will specialize in nothing but cream puffs and will have its grand opening on Saturday, July 21.

The Haddonfield Planning
Board rejected a proposed plan by
Brandywine Senior Living to ex-
pand its current senior facility on
Warwick Road. The for-profit sen-
ior living company had its pro-
posal rejected by the planning
board by a vote of 5-4.
Brandywine Senior Living ap-
peared before the planning board
after having its proposal rejected
by the Historic Preservation
Commission in May. Despite
tweaking the plan since, the plan-
ning board still denied its propos-
al.
Even though the plan was re-
jected, the board approved a re-
quest to allow Brandywine Senior
Living representatives to again
appear before the Historic Preser-
vation Commission to pitch the
plan with its revisions.
Commissioner Ed Borden said
his no vote was certainly not a
permanent vote against the facili-
ty. He said that he felt it was nec-
essary for the HPC to take anoth-

Owned and Operated From Historic Haddonfield
Duke, and being passed over in
the NBA draft, Zoubek knew that
he had to make the next move to
transition into his future career.
He started working on a tech proj-
ect in New York City a year ago,
but he quickly figured out that sit-
ting in front of a computer for the
rest of his life wasnt going to be
in his cards.
I didnt want to spend the rest
of my life in front of a computer.
When I was in New York City, I
kept seeing all of these little
niche shops doing well. Thats
where I came up with the idea,
Zoubek said, as he leaned up
against one of his ovens. I want-
ed more control over my life and
my destiny.
But he knew that he didnt
want to step into the saturated
market of gourmet cupcakes and
macaroons.
I never liked cupcakes grow-
ing up anyways. I always liked
creampuffs; they were my fa-
vorite, he said.
The bakery will churn out be-
tween 500 to 1,000 creampuffs a
day during the beginning stages,
he said, though the break-even
point for the shop is less than 500
sold for a day. Zoubek has some
business training, as he started
his collegiate career as an eco-
nomics major, before dropping it
for U.S. history when his basket-
ball demands became too intense.
While the recipes were mostly
his ideas think chocolate cov-
ered, sea salt and caramel, and
other various flavors Zoubek
lacked the baking background
needed for such a large-scale op-
eration.
Thats where Joseph Vella
comes into the picture.
A graduate of the Restaurant
School at Walnut Hill College,
Vella said he fell in love with bak-
ing and pastries when he worked
at a Shoprite bakery during his
youth. He went to the restaurant
school and graduated with a de-
gree specializing in pastries.
He responded to a Craigslist ad
posted by Zoubek, interviewed,
and found that he shared the
same vision for Dream Puffz.
Its something Ive always
wanted to do. It will be my first
head chef responsibility, Vella
said.
The duo will start cranking out
the cream puffs on July 21 and
hopes to carve out a corner of the
market that doesnt exist right
now.

Y
ouve no doubt passed someone
texting while driving. The per-
sons focus isnt on the road. In-
stead, its on spelling a word correctly
or getting that last comment in.
But a bill in the state Senate it
passed recently by a 38-0 margin
would hike fines for texting-while-driv-
ing considerably. And repeat offenders
would face stiff fines and a possible
drivers license suspension.
If the bill passes in the Assembly,
and Gov. Christie signs the bill into
law, a first-time offender would face a
fine of $200, up from the current $100
fine.
A second offense would run a mo-
torist a $400 fine, and a third offense,
$600.
A three-time offender would be
slapped with three drivers-license
points.
And a fourth-time offender would be
subject to a license suspension of 90
days.
We applaud this bill and want to see
the Assembly pass it and the governor
sign it into law.
Though New Jersey already has
tough texting-while-driving laws on
the books, a short ride on any of the
states major roads would reveal the
penalties are not yet tough enough.
Far too often, people recklessly pay
more attention to their texting than
they do the road.
And quite frankly, the larger fines
and the prospect of losing a drivers li-
cense for up to three months for repeat
offenders is the right penalty for this
kind of behavior.
Its bad enough in 2012 when people
drive while speaking on the phone
(without the use of a headset or blue-
tooth device).
But texting is clearly worse. And
more distracting. And its time people
who gamble with the lives of others
while driving and texting pay a hefty
price for doing so.
This bill must pass in the Assembly,
and the governor must sign it into law.
Swiftly.
in our opinion
Texting bill is on the button
Fines for sending messages while driving would double under new law
Will you still text and drive?
Despite the prospect of a much
tougher state texting-and-driving law,
we wonder if itll matter to local drivers.
Will you still text and drive if the new
law passes?
Hats off to Haddonfields
July Fourth celebration
Hats off to Haddonfield for a lovely July
4 celebration. I want to thank both the Had-
donfield Celebrations Committee and the
mayor and especially folks like Jack
Tarditi who have been on the committee
for so long. The fireworks were the best yet
and the parade was wonderful (again).
We are fortunate to live in a town that
does such a meaningful and fun celebra-
tion honoring our country. The volunteers
and Mayor Tish Colombi should know how
grateful many of us are for what they do.
Often, the letters in this column are the
opinion of the same one or two people who,
for many years, have been complaining,
criticizing and insulting (and I do not mean
the thoughtful and important letters that
maturely address issues in our town).
Lets salute the people who do so much
hard work to make the town a terrific place
to live.

Anniversary Field may not be
a good site for artificial turf
Haddonfield residents may not recall
that Anniversary Field is a burial ground
for concrete debris from Kings Highway re-
construction. A 1999 board of education
bond issue included funds intended to ad-
dress urgent safety concerns about de-
bris that had been surfacing in the field.
According to the Haddonfield Turf Com-
mittees geotechnical report, limited test-
ing of Anniversary Field shows a high
water table and coarse fill that blocked the
auger. The report recommended more
testing to develop budget for removal and
replacement of fill and to establish neces-
sary volume of structural fill.
The field may not be a good site for artifi-
cial turf installation.
Only additional testing will determine
whether the debris or drainage in Anniver-
sary Field might make turf prohibitively
expensive, or even completely unsuited.
The turf companys $356,000 estimate (pro-
vided through the Haddonfield Turf Com-
mittee) only covers an ideal installation.
The scope and cost of this job will un-
doubtedly increase. The estimate contains
a list of exclusions: rock excavation or re-
moval, removal or remediation of unsuit-
able subgrade soils, geotechnical services
related to subsoil evaluation or infiltration
testing and provision of storm-sewer im-
provements for conveyance or attenua-
tion/infiltration beyond those included in
the budget estimate.
Anniversary and Stadium fields esti-
mates both exclude costs for removal of ex-
isting irrigation systems. Further, the cost
for tree removal isnt mentioned at all, but
please see LETTERS, page 7
the fields are surrounded closely
by hundreds of mature trees
whose roots can damage artificial
turf and void the warranty.
Field turf s own literature indi-
cates an environmental impact
study might be required if many
trees need to be removed, as
would be required here.
Furthermore, the 4-year-old
surrounding track remains im-
properly configured and is failing
structurally, (per Mr. Del Ducas
proposal letter), possibly because
of longstanding hydraulic
(drainage) issues on the land in
that area (the 1996 BOE bond in-
cluded funds for drainage im-
provements and replacement of
the previous track, which was de-
laminating due to lack of ade-
quate drainage; the current track,
about 4 years old, has been delam-
inating for several years).
Stadium Fields retention wall,
built in the 1940s, probably con-
tributes to moisture retention in
the field that has caused two
tracks to fail, and will make a new
turf field infiltration system inef-
fective without additional work
on storm sewer drainage (exclud-
ed from the estimate).
The Del Duca letter states arti-
ficial turf on Stadium Field will
not correct the failing track. Is re-
mediation of the retention wall
and drainage under the track an-
other expense?
Also, consider costly add-ons
and upgrades, such as protective
covering for events such as gradu-
ation, and new or reconfigured ir-
rigation systems for cooling. In
the summer and during spring
and fall heat waves, fields can be-
come too hot to be safe for play
(from 58 to 75 degrees hotter than
air temperature in one study).
We certainly need additional
evaluations before promising any
taxpayer dollars for artificial turf
on these fields. The borough and
BOE would benefit from more op-
portunity for public review and
comment on the entire artificial
turf plan, so that its actual cost
may be fully understood.
I also have to ask: Why these
fields? Stadium Field is not large
enough for mens soccer, and An-
niversary Field is only a practice
field. If were going to spend this
kind of money, shouldnt we se-
lect fields that will provide the
biggest benefit for all our ath-
letes?
John Moscatelli
Using taxpayer money
for turf field unethical
Regarding Ed Bordens letter to
The Sun: just because he believes
the commissioners decision to
fund Astroturf with taxpayer
money is the right one doesn't
mean it is right.
To use taxpayer money to fund
something that will serve a small,
select group of people is clearly
not an ethical use of taxpayer
money. To ask taxpayers to spend
their hard-earned money on such
an extravagant item and from
what I am reading, highly toxic
and dangerous is shameful.
I am happy to pay taxes for
those items that serve the whole
community, such emergency

We had to let our refuse collec-

because there wasnt any money.
How can there be money for As-
troturf and no money for the peo-
ple who worked for the borough
for years?
Moderation and balance are
the lessons we need to teach our
students.
Haddonfield has one of the best
athletic programs in the state,
and we have done it without turf.
Those who want turf need to pay
for it with their own money; but if
turf is going to threaten our
ground water and cause undue
injury to students, why is it even
being considered?
It is not an item that benefits
the community and, therefore,
is wrong to make taxpayers fund
it. Even if the item were on the
ballot, it would still be wrong. A
simple majority is not always
right.

June was a special month for
Rasul Carter and Niesha Rey, as it
marked their graduation from the
Bancroft School Transition Pro-
gram at Camden County College,
a collaboration between Bancroft
and Camden County College
(CCC) now completing its inaugu-
ral year.
The program, for students ages
18 to 21 with autism and other in-
tellectual and developmental dis-
abilities, provides specialized
classes at the colleges main cam-
pus in Blackwood, as well as work
opportunities, interaction with
nondisabled peers and a range of
other collegiate experiences.
Launched in fall 2011, the Ban-
croft School Transition Pro-
grams goal is to successfully
transition students with neuro-
logical disabilities to adult lives
and jobs.
For 21-year-old Rasul, the op-
portunity to work independently,
improve his communication
skills and maneuver in social set-
tings through his three part-time
jobs has resulted in a noticeable
shift in his confidence level.
Rasul works at the Aquarium
Center in Clementon, does
grounds maintenance at the col-
lege and works at a local Wawa.
Niesha, 21, has grown tremen-
dously, too.
At her job cleaning the college
lunchroom, she gained the re-
spect and admiration of her su-
pervisor, who says he would hire
10 more employees just like
Niesha.
This Bancroft program en-
ables students who would other-
wise remain in their same sec-
ondary school in many cases,
for seven years to instead have
the opportunity to develop
greater independence, communi-
cation and social skills and func-
tion successfully in an age-appro-
priate environment, said Bob
Lenherr, Bancrofts senior direc-
tor of education. Were proud to
recognize Rasul and Niesha as
the first graduates of the Ban-
croft School Transition Program
and look forward to empower-
ing other students to follow in
their footsteps in the coming
years.
A recent study found more
than a third of young adults with
autism had not secured a job or
pursued higher education beyond
high school. However, for chil-
dren with autism and other devel-
opmental disabilities who will
soon age out of school which
occurs at age 21, when students
are no longer eligible for free edu-
cational services under the feder-
al Individuals With Disabilities
Education Act the Bancroft
School Transition Program helps
them to be as prepared as possible
for adult lives and responsibili-
ties.
As the first students to gradu-
ate from the program, Rasul and
Niesha have completed high
school diplomas in conjunction
with specialized classes on the
college campus, work opportuni-
ties, time for interaction out of
class, immersion into society and
transition services to increase
their mobility, socialization and
problem-solving abilities.
Moving forward, program ad-
ministrators hope to develop a
mentoring program between Ban-
croft and CCC students, and en-
able Bancroft students to audit
regular courses at the college.

er look at the modified version of
Brandywines proposal.
My no vote was principally to
allow the HPC to have another
look at the application in its mod-
ified form. I think there are a lot
of very positive things about the
Brandywine application. It does
address the concerns of massing
and scale, Borden said. I think
they really went out of their way
to accommodate the neighbors
concerns. I hope they can do a bit
more to modify the plan, and
thats a determination that needs
to be made in the near future. I
think its important to get this
back through the HPC expedi-
tiously and to come back to the
planning board in our August
meeting.
Brenda Bacon, president of the
senior living facility, said Brandy-
wine cannot provide the quality
of service it wishes for its resi-
dents by keeping the same foot-
print on its current location.
They want us to stay on the
same footprint and continue to be
a nice park for them. We cant
provide quality services on that
same footprint, but well continue
to adjust our plan and listen to
everything they say, Bacon said.
We want this to be a worthy proj-
ect for the borough.
Bacon said its unknown what
Brandywine would do if their
next proposal with the HPC and
planning board is rejected. It
would be up to the borough at
that point, she said, to determine
if it wanted Brandywine in Had-
donfield.
The senior living organization
proposed that the current 25,000
square foot facility which was
built in 1953 be demolished and
a new, two-story 40,900 square-foot
addition be built on the property.
At the time, Lee Albright,
Chairwoman of the HPC, said the
organization rejected Brandy-
wines plan for several reasons.
The plan would negatively im-
pact the historic character of the
site by reducing the amount of
open space, trees and landscaping
already existing which are his-
torically appropriate for the
backyard of a historic residen-
tial area, she said.
There is no set date for the
meeting with the HPC.
