Hog Roast

Mix and inject into meat at various times during roasting: (I ususally double this) 12 oz Lawrys Seasoned Salt 2 qt white wine 1/4 cup garlic powder Done the evening before: Rub body cavity with sage Insert spit through pig Wrap hog in 1" mesh chicken wire. Tighten wire by twisting mesh with pliers. As hog cooks and shrinks the mesh will need further tightening.

Pigs have run anywhere from 150# to 238# Cooking time runs from 9-12 hours Get charcoal Make list of people to call for the pig roast Reserve a roaster.

Punch 2 Wild mountain berry Koolaid 1 1/2 cups sugar 12 oz lemonade 1 gal water or 2 two-liter bottles of 7-up 1993 Went through one 16 gal. and one 8 gal. keg of beer
