One day Game Seminar

This one day specialist seminar covers all aspects of Small and Large Game from its identification and preparation to its background, history and cooking tips. The day is divided into two main lectures with the first on Feathered and Small furred Game followed by lunch and the second on Venison. This seminar will cover all the aspects of hanging, quality points, classification, recognition and preparation taking each species of bird and small furred game individually and speaking about it in detail. The second lecture will cover all of the deer species found in the UK with a demonstration on the skinning of a whole carcass followed by its butchery into joints and then taking them down even further to larder trimmed cuts. The hugely popular Game Seminars at Westminster Kingsway College are now in their ninth year and it remains one of the only events of its kind in the UK. Chefs from many top establishments have attended including The Sheraton Park Lane, The Landmark, The House of Commons, The Crown Plaza, The Peach Pub company and The Royal Garden Hotel. The seminars attract food experts and amateur chefs who all have a passion to discover more about UK game. The Game Seminar will cover all the theory game elements for VRQ and NVQ 3 qualifications. The Game Seminar is sponsored by the countrys leading game dealer, UK Game and the seminar is hosted by Westminster Kingsway College Chef Lecturer and leading game specialist, Jose Souto. This seminar has become a regular annual event on UK Games calendar.
