n January 23, 2009, Paragon
Village Senior Living Community
held a one hundredth birthday cele-
bration for one of our first residents, Rose
Madsen. A great party, with live entertain-
ment, was enjoyed by Rose's Family, fellow
Paragon Village residents and visiting dig-
nitaries.
Rose was recognized with resolutions
from: The Morris County Freeholders: pre-
sented by Freeholder Margaret Nordstrom,
and The Mount Olive Town Council: pre-
sented by Councilmember Steven Rattner.
The Township of Mount Olive declaring
Friday, Jan. 23, 2009 as Rose Madsen Day:
presented by Mayor David Scapicchio
The State Legislature of New Jersey also
provided a resolution.
Rose Madsen was born January 23, 1909
in Grantwood, NJ to Joseph Safino and
Grace Caccola .
She was the second eldest child of eight,

Wednesday, February 11 - The Allamuchy
Board of Education will be hosting a
Community Forum at 7:00 pm in the
Allamuchy Township School located at 20
Johnsonburg Road. At this meeting, repre-
sentatives from the Board of Education will
update residents about the construction
project at the former Villa Madonna con-
vent. This construction is scheduled to be
completed in time for the 2009-10 school
year. Jay Perantoni, from SSP Architectural
Group will be on hand to answer any ques-
tions that residents may have regarding the
construction project. In addition, it is
anticipated that representatives from
Centenary College, the Morris Center
YMCA and the West Morris Area YMCA
will be in attendance to discuss their plans
for programming in the Rutherfurd
Mansion, a 1903 historical treasure which is

Local Eye Doctor Helps Kids See

A
year and a half ago, Dr. Brelvi had
a vision, and due to that vision 200
children have received the gift of
clear sight through the KidSEE 20/20
Vision Program. School age children
throughout Morris, Sussex and Warren
Counties are referred to Dr. Brelvi by their
school nurses, administrators, or family
members who are existing patients at the
Wal-Mart Vision Center located in Mount
Olive.
This unique vision program was founded
in May, 2007 by Brelvi. The mission is to
ensure that all school children under the age
of 15 have access to affordable eye exams
and eye wear, at a modern facility run by
trained professionals.
Brelvi asserts after failing to pass a
vision screening by the school nurse, some
youngsters are unable, for various personal
constraints, to visit an eye care professional
for further evaluation. The KidSEE 20/20
Vision Program is his well thought out
response to addressing this “provider gap”
in our health care system.
Officially launched by Brelvi with his
eye care team at the Wal-Mart Vision
Center in Mount Olive, this initiative allows
all children from ages 5 through 15 to
receive a thorough eye exam for a nominal
fee. The team feels that clear vision in
young school children should be treated as
an urgent priority and should be addressed
by not just the parents but by the entire
community.
Brelvi reflects on many heartwarming
stories but one in particular is the young
boy rushing into his office brandishing a
sports trophy broadcasting to the vision
team “look, look I won a trophy in a soccer
match; these glasses are great and make me
play better”. The goal is to make parents,
school and health administrators aware of
the vision program. Brelvi and his team
look forward to examining at least 500 chil-
dren by 2010.

which later merged with
Cliffside Park.
Her mother died at a
young age, so Rose took
care of her siblings and
helped run the store.
Her early memories
include walking to school
with all the neighborhood
children and having to carry
sticks to ward off snakes.
She also remembers riding
the trolley car to take the
ferry to New York City to
buy supplies for the family

Eventually Rose became
a nurse. She married
William M. Madsen after
World War II, in August
1945. She had two sons of
her own and moved to
Middletown in the early
1960's. For most of her
life, Rose worked for a

s US Airways flight 1549 was

landing interrupted the meeting they went
into action, setting up a command center to
coordinate any New Jersey response that

contacted the Sussex County Chapter who
sent out an email to all local Red Cross vol-
unteers to stand by in case shelters for pas-
sengers and their families needed to be

tion. But once he was sworn

president. Well people seem
to forget that he is really our
first inter-racial president.
He seems to conveniently
forget that he is half white.
But as one commentator put
it the Democrats could not
market him (for lack of bet-
ter terms) as an inter-racial
candidate they needed to
market him as an African
American.
I give Obama a lot of
credit on his win and cam-
paign, but he is not the sav-
ior of our country. The jury
is out on what exactly he
will do but as early indica-
tions show it is not good.
I really want to give him
a chance. I really want to
see him do well and turn
this country around. But
there is just something
about him that literally eats
away in my gut when I see
him, and listen to his vision
for America.

Relleno. Served with a mild ranchero sauce, it was a large
roasted poblano pepper stuffed with cheese, dipped in egg
batter and fried to a crisp golden color. It was as good as it
sounds. After only a few bites, my friend declared that he
would most certainly return and order this again.
The next dish to arrive at our table was Carne De Puerco
En Salsa Verde, which is simply chunks of tender pork
served in a savory, mildly sweet, green tomatillo sauce. A
basket of warm corn tortillas accompanied this very authen-
tic dish.
The Mole Poblano Chicken was a surprising delight. I
had ordered this entrée more than once while in Mexico,
and have found proper preparation to be inconsistent. Here,
it was excellent. The sauce was exactly as it should be,
savory without being overpowered by the spices or its sub-
tle chocolate flavor.
Since there were just two of us on this visit, and we had
been served more than enough on this evening, I brought
home a take-out order consisting of two entrees and shared
them with my family the following day. “We do a lot of
take out,” Rojas said. “We sell our sauces and our chips.
People request this.” They also sell their Salsa Fresca with
chips and offer customers pre-made packages called La
Hacienda Packages. Basically, said Rojas, “They can have
anything they want on the menu.”
Our take-out order included Enchiladas, which were
delicious, moist fillings inside rolled corn tortillas. We also
had The Hard Hand Rolled Taquitos, crisp rolled corn tor-
tillas served with lettuce, salsa fresca, avocado, and queso
fresco. These were quick to disappear!
Rojas has also created unique authentic desserts that are
very enticing. When the desserts were served, my friend
and I were not sure we would be able to eat another bite.

Then the Pastel 3 Leches arrived, and we discovered nir-
vana. This homemade white cake was soaked in three milks
and brandy, and is so luscious that it would be worthy of
any special occasion.
“The cake, that's my recipe. Many recipes call for rum,”
said Rojas, “but rum just doesn't give the right flavor so I
use brandy.”
Another noteworthy dessert at Fresco De Noche is the
Flan De Leche, a homemade flan that has earned a reputa-
tion all its own. Jose Bastarrika of Flanders, a regular cus-
tomer at Fresco and a big fan of this amazing treat, later
told me, “The flan is just ridiculous.” For myself, I have
never been a big fan of this particular dessert, but my din-
ing companion's comments about it being the best he's ever
had intrigued me. One taste won me over. This was the per-
fect rich, creamy consistency that should be flan. About this
treasure, Rojas revealed only that the special recipe came
from a Cuban friend.
We ended the meal with one final dessert sample,
Bunnuelos. A crisp homemade tortilla sprinkled with cinna-
mon and sugar and a serving of vanilla ice cream in its cen-
ter was drizzled with chocolate sauce.
The most striking thing about this restaurant is the
authenticity of the food. “I could make the food gourmet. I
could make it fancy,” Rojas said, “but I prefer to keep it
authentic, the way you would want to eat at home.”
During my visit to Fresco De Noche, I couldn't help
overhearing the comments of other diners in the restaurant.
“Excellent as always, Marco,” came from the table behind
us.
Cervantes says, “The main thing is our connection with
the people. One of our customers set up a facebook page for
us because she's such a huge fan. It's called Fresco De
Noche fan club. It makes you feel good that you're doing
something right.”
At one table on this evening, a family with three young
boys sat across from us. I watched the young mother
patiently reading to her youngest, her blond head leaning
close to the boy as she spoke. His brothers were engrossed
in some type of video games, quietly waiting for their order.
When the waiter arrived at their table, I was surprised to see
three plates of chicken fingers and fries set before the
youngsters. Upon checking, I discovered that Fresco offers
a children's menu with Cheese Quesadillas, Sineronizada
(grilled ham and cheese on a flour tortilla), Hot Dogs,
Nachos with beef or chicken, and Crispy Taquitos Dorados,
each with a choice of fries or fruit.
For special occasions, Fresco De Noche does catering.
Bastarrika recalled a recent event at his home. “We had a
big party at Christmas. They sent someone to do a taco sta-
tion and our guests really loved it.”
Fresco De Noche is open for lunch and for break-
fast as well. “We offer breakfast burritos, which are really
a big hit,” Cervantes said. “There are five varieties, includ-
ing the Flaco Burrito. That's a skinny burrito because it's
made with egg whites…less fat.”
There is no doubt the food here is great. It's also truly
authentic Mexican, not like an Elvis impersonator. “We've
had customers from California, that part of the country, and
they tell us it's so great to find real authentic food like what
they have in the Southwest,” Cervantes said. Their slogan,
“Eat Well…Live Happy”, resonates with customers.

family-oriented restaurant located in

46 East, is owned and operated by Pedro
and Javier Saco.
Pedro has over 20 years experience with
International House of Pancakes (IHOP) as
a Kitchen Manager and Chef Trainer. He
is also a two time winner of the IHOP
Golden Spat(ula) competition, winning 1st
place in New Jersey and the northeast

a serious danger to the United States, uh,
but, uh, we cannot try because of various
problems related to evidence, uh, in a
Article 3 court. So this task force is going
to provide us with, uh, a series of recom-
mendations on, uh, that. Is that correct,
Greg?
CRAIG (his attorney): That’s right.
And detainee policy going forward.
OBAMA: And detainee policy going
forward so that we don't find ourselves in
these kinds of situations, uh, in the future.
CRAIG (his attorney): And there is
clear guidance for the military as well.

You might ask what is wrong with this.
He is asking the attorney on what to do or

yelling ‘we are not in a war on terror we are
your friends.’

interview on an Arab TV station. Another
slap to us. Of course no one in the main
stream media dare say a bad worked about

This whole infatuation with Obama is
insane.
He is not a king; he is not the best
President we have ever had. He is a man
who was billed as larger than life. A great
communicator (or BS artist) that will tell
people what they want to hear. He has less
experience than any other President in
recent history.
The people he is surrounded by are peo-
ple who want to socialize this country to a
point where we will not exist as a democra-
cy.
His trillion dollar bail out will yield only
12 cents out of every dollar back into the
economy. From socializing the health care,
auto and banking industries and buying
600 million dollars worth of new cars for
the government and another 150 million for
bee’s there is more waste in this bailout
than ever before in history.
The only people that will benefit are the
people who do not pay into the system.
They will receive money from the govern-
ment, subsidies and more welfare. Hard
working people like you and me will con-
tinue to pay for these programs. But if all
goes well we will see about 20 bucks a
week more in our pay if you work. The non
tax paying people will see more than people
that actually pay taxes.
Eventually people will wake up - but it
will be too late. Obama is a fake. He is man
who has a vision for America as a weaker
country where the citizens will have to
depend on government to survive and we
will bend to all radicals to keep a peace
which will only be temporary until they
weaken us enough to bring us to our knees.
I hope I am wrong but early indications
tell me that we are on the downward slide
and going to go downhill fast.

Something Different...

Wilkins, Owner Chris Hall has invited him
to return on a regular basis. After the upcom-
ing show on February 21st, the Mt. Olive
Bar & Grill will be featuring a different set
of comedians every Saturday with Wilkins
as emcee starting in March. “He’s an icon in
this area. People know who he is,” said Hall.
“What’s really nice is the quality of the
comedians he brings in. People are amazed
at the caliber of talent.”
For years, when he hasn’t been busy
entertaining audiences in New York, Wilkins
has appeared at New Jersey clubs like The
Stress Factory in New Brunswick. Fans still
remember him from Rascals and Porky’s,
too. Over the years, Wilkins has appeared at
fundraisers for groups such as Mt. Olive
baseball and wrestling, and the Succasunna
Board of Education.
Originally from North Carolina, Wilkins
has been doing comedy for about 15 years.
Starting out, he had aspirations of being an
actor. Then, one night, after watching
HBO’s comics, he decided to audition for
HBO. Standing up in front of about 400 peo-
ple, he found his calling. He didn’t make it
onto HBO, but the experience made him
determined to hone his craft. “I used to do it
for fun, but now it’s serious,” said Wilkins,
who was the class clown in high school.
Since then, he’s worked with groups from
MTV like Bill Bellamy, and George Annato
from the Howard Stern Show. He also cred-
its the influences of Richard Pryor, Robin
Harris, and Bernie Mac for his unique comic
style.
Wilkins says he gets his ideas from
everyday occurrences and family. His style
is sometimes physical, and he says people
can relate to his work. “People in the crowd
will say oh, that happened to me,” he notes.
Since owner Hall partnered with Colleen
Barron, comedy nights are not the only thing
new at the Mt. Olive Bar & Grill. Fridays the
Grill features live music. “We actively inter-
view and solicit bands on a daily basis,” says
Hall. “We’re first and foremost a restaurant,
but we’re also a sports bar, a night club, and
a comedy club all rolled up in one. That’s
what makes us different.”
Looking at the Grill’s schedule of events
each week, their diversity is obvious. On
Mondays, which happen to be the restau-
rant’s official pasta night, Players Pub Poker
is held in the restaurant’s private room. Also
known as no-risk Texas Hold-em, the game
is played for points rather than money, and
winners can earn prizes and carry their
points to other locations. On Tuesdays and
Wednesdays, there are drink specials during
the games, which can be viewed from liter-
ally any seat on one of the many large flat
screen TVs. Thursdays, there’s a DJ. “We
clear out an area for dancing,” Hall says.
The value here is unquestionable.
Comedy nights are far more economical
than a trip to the city. A $25 cover charge lets
guests choose either the 7-9 show or the 10-
12 show each Saturday. In addition, every-
one is automatically entered into a drawing
for a free dinner. The kitchen is open for din-
ner until midnight on show nights. Menu
prices, too, are quite reasonable. Hall points
out, “When people come here, they can get
a 24-ounce rib eye steak and clams for under
$25. We have some of the lowest prices in
the area.”
Value is certainly an important factor
when choosing a restaurant. What’s more
important, however, is quality. Anyone who
has ever ordered the sweet potato fries at Mt.
Olive B & G knows something is different
here. Hall told me, “We hand-cut all our own
meat here. Everything’s fresh, the seafood,
everything. Our chefs prepare a different
specials menu every night.”
Hall says they go to a lot of trouble to
please their customers. One example is their
very popular Philly cheese steak. “We actu-
ally went to Philadelphia to Patsy’s. We get
all our ingredients from the same place they
do so everything you get there, you can get
here too.”
On a recent visit, I had dinner with a
friend. I was intrigued to learn that Head
Chef Richard Manos trained at the New
York Culinary Institute and interned at the
Meadowlands. He was previously head chef
at The Smokehouse. “Rich brings a lot of
diversity to our menu while still keeping to
the traditions of a grill menu,” Hall explains.
I wondered if the food here would live up
to its reputation. After one taste of the Cajun
Tempura Shrimp, the evening’s appetizer
special, I knew it would. The large succulent
shrimp encased in a light tempura coating
had just enough of a kick to warrant dipping
in the cool and tasty ramoulade sauce.
The next time you are chilled to the bone
by New Jersey’s glacial winters, consider
stopping by for a cup of soup. We had the
Butternut Squash Soup, an unexpected
delight. It was rich and creamy, and
demanded our full attention. What a won-
derful way to get your veggies!
Our salads were noteworthy as well.
Baby spinach leaves tossed with onions, car-
rots, roasted peppers, and croutons, were
drizzled with a light warm bacon vinaigrette
and topped with grated cheese and crisp lean
bacon.
Our entrees included tender flaky crab
cakes inside a crisp coating. Both my friend
and I agreed these were excellent. In addi-
tion, we were served slices of New York sir-
loin with a wonderful demi glaze. Each bite
was so tender, it almost melted in your
mouth. Served along with these two superb
items were wedges of seasoned roast Yukon
gold potatoes and a side of whole green
beans and sliced carrots cooked al dente.
Needless to say, there was more food
here than any two people could hope to fin-
ish in one sitting. However, in the interest of
fairness, we both thought it best to at least
sample one or two items from the impres-
sive dessert tray.
With choices like white raspberry mousse
pie and fruit-topped cheesecake, we knew a
decision would not be easy. Our server,
Shannon Boise, patiently explained each
choice. There was carrot cake, three-layer
chocolate fudge cake, apple crumb, and so
much more. One of our two choices turned
out to be something called Night and Day, a
pie made up of cheesecake under a layer of
chocolate mousse with a fudge topping. This
is the one to order when you are celebrating.
Actually, you may feel like celebrating once
you’ve tasted this. Yes, it was that good.
Our other choice was our server’s per-
sonal favorite. Oreo silk pie is made up of a
layer of chocolate mousse under a layer of
vanilla mousse on an Oreo crust. It’s topped
with Oreo crumble and a drizzle of white
chocolate. I’m actually hard-pressed to say
which was better. Certainly, any choice at
this establishment appears to be the right
choice. What’s more, the prices were far less
than what you’d expect for cuisine this grat-
ifying.
Hall is happy to point out that Mt. Olive
Bar & Grill is a great place for everyone. His
son, Ian, is a sixth grader at Long Valley
Middle School and enjoys coming by after a
basketball game. “I brought my friends here
and they think it’s really good,” the boy
explained. “It’s fun to watch the NBA while
I’m munching down on a cheeseburger.”

Recently, after a long Saturday with their
school’s wrestling team, Mike Cambell and
Scott Anderson of Randolph were looking
for a place for lunch. This was their first
visit to the Mt. Olive Bar & Grill. They sat
in the bar area, which is partitioned off from
the larger restaurant.
“The chicken wings are to die for,”
Cambell remarked.
“We enjoyed the afternoon,” Anderson
added. “We’re looking forward to coming
back.”
Mt. Olive Bar & Grill offers both on and
off-site catering. Hall notes they’ve done a
great deal of parties for families as well as
sports parties and event. “We’ve hosted
events for the Long Valley Raiders, Mt.
Olive wrestling, and we’re hosting the Mt.
Olive Teacher’s Association. Our party
room holds up to 40.”
Longtime manager Susan Faga is the one
to contact for more information. Hall refers
to her as “the mother of all”, saying, “She
really does a little of everything.”

Abraham Lincoln in Life and in History

O
n February 12, 2009, the two hun-
dredth anniversary of the birth of
Abraham Lincoln will be marked
by the nation. Lincoln is by mostly all
accounts considered the greatest of our
presidents, having led the United States
through the Civil War and begun the
process of the emancipation of the slaves.
Through most of his political life
though, he believed in a limited executive,
a view characteristic of the Whig party of
Henry Clay. Clay was his boyhood hero,
not Andrew Jackson, and Lincoln once
acknowledged that he was in all things a
Whig. He accumulated a total of four for-
mal months of education, yet he wrote
some of the most elegant prose in the
English language. He grew up reading the
King James Version of the Bible and
Shakespeare, not bad role models for 19th
century stylists. He was acutely aware of
his educational deficiencies and insisted
that his eldest child, Robert, go to Harvard

College. When he read a book he totally
absorbed it -- reading it aloud so he could
see and hear it at the same time.
Lincoln was truly born poor, a boy who
hated manual labor, who rarely got along
with his father, but he lived in a world of
dreams and history. He was deeply influ-
enced by the Founding Fathers, especially
George Washington, and in one of his earli-
est speeches he lamented that they seemed
to have gotten all the nation’s glory, and left
little for future generations. He obviously
was personally very wrong.
Once in the White House he reminded an
Ohio regiment that the mere fact that he was
president showed that it was possible that
one of their boys could be president some-
day. He knew that he was the American
dream come true -- the very exemplar of
virtuous ambition rewarded.
From the earliest years of his manhood,
he was extensively involved in politics in
Illinois, serving with distinction in the state
legislature and was known for pork barrel
politics, the Whig preference for internal
improvements. Finally he received a
chance to go to Congress and he gladly took
the honor. But there he opposed President
James K. Polk and the Mexican war, and
suffered public disapproval back home.
The successes of the Americans in the war
led to vast tracks of land in the Southwest
being opened up to slavery. The Mexican
war was the father of the Civil War in a very
real way.
Lincoln was unable to advance very
much after that, losing election after elec-
tion. He was still a Whig, but the Whig
party was unsuccessful in trying to expand
its base, and it was the new Republican
Party that garnered the energy and interest
of people. Reluctantly he became a
Republican, saying goodbye to the party of
Clay.
As is frequently said, Lincoln was no
abolitionist, but one must not forget that he
consistently stood for no expansion of slav-
ery into the new territories -- a position that
the South could not accept. He ran on that
plank, administered his government at first
on that caveat, but then realized what
General Ulysses Grant said at the start of
the Civil War -- the dynamics of the conflict
would end in total abolition.

gies, raised up armies and resources, and
pursued a modest foreign policy so as not to
take away Union energies from the war.
Doris Kearns Goodwin has praised Lincoln
for assembling at first a team of rivals to
head up his administrative departments.
She forgets that one cabinet secretary was
initially disloyal to the president, another
was removed for corruption, and several
others were barely competent. If that was
a team, and Lincoln’s approach is being rec-
ommended to President Obama, then per-
haps one should review that recommenda-
tion.
